For a while at least, this may become my favorite recipe for a very favorite fish. Lately I’ve wanted to prepare it on top of the range, and when it works, it ends up with an attractive and delicious crispy skin, but until I can manage to do it well each time, and without the anxiety, I’m going to feel better about putting the bass in the oven, after first dressing it a bit at leisure, and then just forgetting about it until they need a quick finish, one that requires absolutely no skill.

Last night it was also totally luscious.

Going this route will be particularly handy with guests, as I’ve already learned.

one thick Striped Bass fillet (a total of 13 ounces) from American Seafood Company, washed, drained, brought to room temperature, divided into 2 sections by cutting down the middle, arranged skin side down on the bottom of a small glazed terra cotta pan resting on a coating of about 2 teaspoons of olive oil, scattered with a mixture of chopped fresh herbs, specifically, ‘za’atar’, or, technically, origanum syriacum, from TransGenerational Farm; thyme and spearmint from Stokes Farm; and lovage from Keith’s Farm, plus one partially-crumbled bay leaf purchased while fresh, from Westside Market [alternatively almost any fresh herb or combination of herbs could be used in this recipe], seasoned with Phil Karlin’s P.E. & D.D. Seafood Long Island Sound sea salt and freshly-ground black pepper, sprinkled with some of my homemade dry bread crumbs and drizzled with a little olive oil, placed inside a 425º oven for approximately 25 minutes, removed when done, sprinkled with a bit of the chopped heavenly herb, epazote, also from TransGenerational Farm, and arranged on the plates, squeezed with the juice of a small organic Mexican lemon from Whole Foods and drizzled with olive oil

three beautiful yellow plum tomatoes from Stokes Farm, halved, dried, and rubbed cut side down on a plate scattered with some sea salt and black pepper, pan grilled inside a medium size enameled cast iron ribbed pan until slightly softened and marked by the pan, arranged on the plates, drizzled with a tiny bit of white balsamic vinegar, then some olive oil, and garnished with scissored dill flowers from Willow Wisp Farm

a few ounces of hand-picked haricots verts from Samascott Orchards in Kinderhook, NY, left whole, blanched until barely tender, drained, and dried in the same large antique Pyrex Flameware pot in which they had cooked, now over a low flame, shaking, then set aside inside until the rest of the entrée was just about finished, when they were reheated in a little oil inside a heavy well-seasoned cast iron pan, finished with salt and black pepper

the wine was an Oregon (Willamette Valley) white, Chris Baker Willamette Pinot Gris 2018, from Naked Wines

the music was Lully’s 1684 opera, ‘Amadis’, with an interesting libretto involving “chivalric romance and the doings of gods and goddesses” on an obscure subject suggested by his patron, Louis le Grand, performed by Christophe Rousset leading Van Wanroij, Tauran, Perruche, 
Bennani; Auvity, Arnould, Crossley-Mercer; Chamber Chorus of Namur, Les Talens Lyriques, Rousset

I now prefer cooking bass in a pan, using a more minimal approach, to let more of the goodness of the fresh fish shine, and subjecting it to high heat on top of the stove, to produce the crispy skin usually associated with professional chefs, but last night I needed to work quickly and with no stress, so I returned to the oven.

  • two striped Bass fillets (about 7 ounces each) from Catherine at the Seatuck Seafood Company’s stand in the Union Square Greenmarket, each scored with several very shallow slashes on the skin side, to prevent curling, placed inside a glazed ceramic oven pan skin side down, scattered with a little chopped thyme from Keith’s Farm and oregano from Stokes Farm, sea salt, freshly ground black pepper, a light sprinkling of some homemade dry bread crumbs, and drizzled with a little olive oil, placed in a 425º oven for 10 to 12 minutes, or until cooked through, the fillets removed from the pan, arranged on 2 warm plates, a little juice from an organic Whole Foods Market lemon squeezed over the top
  • eight small satina potatoes (like carola, with yellow skin and yellow flesh) from Keith’s Farm, scrubbed, boiled unpeeled in heavily-salted water until barely cooked through, drained, halved, dried in the still-warm vintage Corning Pyrex Flameware blue-glass pot in which they had cooked, tossed with a tablespoon or more of rich some rich Organic Valley ‘Cultured Pasture Butter’, sprinkled with sea salt and freshly-ground black pepper, garnished with micro chervil from Two Guys from Woodbridge

  • late-season cavolo nero [what originally appeared to be only a small stash of loose leaves and small bunches, from Tamarack Hollow Farm, but ended up as a generous vegetable side, because I was careful not to let it reduce too much] wilted briefly inside a heavy antique medium size tin-lined copper pot in a tablespoon or so of olive oil after one halved rocambole garlic clove from Keith’s Farm had first been heated there until fragrant and softened, the greens seasoned with sea salt and freshly-ground black pepper and drizzled with a little more oil
  • the wine was a California ( ) white, Jac Cole Unoaked Chardonnay Alexander Valley 2017, from Naked wines
  • the music was Haydn’s’ 1779, ‘L’isola Disabitata’, another 18th-century opera with a fantasy island setting (and Haydn once went to the moon with one),  Antal Doráti conducting the Lausanne Chamber Orchestra

When things go well in the kitchen. But not necessarily perfectly.

It was a really delicious dinner, although it wasn’t quite the dinner I had intended.

I thought it would end up looking more bright green than brown-green. I think I’ve pretty much gotten the crispy fish skin technique down, but now I have to know when to stop, or at least turn down the flame at the right time.

I’d say that the fish itself was superb, and cooked à point, which is an expression usually applied, in this country at least, only to steaks, an impreciseness which fits nicely with the meaty appearance of the bass fillets this time. Even the sauce was really tasty, in spite of having taken on a bit of an unintended brown butter effect.

In an earlier post I wrote that ‘the technique’ is from a page I found on line, ‘Perfect Seared Fish‘, written by Hank Shaw, who describes himself as a former line cook, but who is much more than that.

I didn’t have any micro sorrel or shallot blossoms this time, so I improvised a substitution for the main ingredient of the sauce: garlic scapes and celery stem and leaves, and I held the garnish. I think the decision worked out perfectly, except, maybe, for the brown part.\

  • one 14-ounce striped bass fillet from Pura Vida Seafood Company, removed from the refrigerator, the thick and the thin sections each halved, salted just a little, allowed to rest at room temperature for 20 minutes, then the skin side scraped with a butter knife to remove excess moisture, both sides patted dry afterward with a paper towel, an 11-inch well-seasoned French steel pan heated above a high flame and a tablespoon, or a little more, of Mac Nut macadamia nut oil from Whole Foods Market poured into the pan, swirled to cover the bottom, and allowed to get hot, all 4 fish pieces placed skin side down inside the pan, which was immediately jiggled to be sure that the fish wasn’t sticking, the flesh side of the fillets salted, the heat turned down to medium-high, the bass pressed down lightly with a spatula for 30 to 60 seconds, to ensure that the skin browns evenly, then cooked without moving them for 3 or 4 minutes, the thinner pieces temporarily removed after only about one minute, set aside and returned before they were all to be flipped, at which moment the pan was first jiggled again, to see that the filets moved easily, the bass cooked skin side up for another minute, maybe a bit more, then removed to warm plates; the heat having been turned off before that minute was up, a tablespoon and a half of butter was now added to the pan, swirled so that it melted swiftly, followed by a generous helping of barely-blanched garlic scapes, from Berried Treasures Farm, cut into very short lengths, along with some chopped fresh celery leaves from from Lucky Dog Organic Farm, the pan stirred with a wooden spatula, the sauce immediately poured onto the 2 plates next to the fish already resting there

It looks right, and it tasted very right.

I finally managed to prepare a bass filet, a very fresh bass filet (actually 2) in a way that it would show and be enjoyed in its purest form, elegantly minimal, seasoned with salt alone, and with a crispy skin, but I just couldn’t help slipping a little micro green underneath, and tossing some micro flower on top.

There wasn’t any lemon in sight, but sorrel has something of a lemon-ish thing going for it.

The technique is from a page I found on line, ‘Perfect Seared Fish‘, written by Hank Shaw, who describes himself as a former line cook, but who, it becomes obvious, is much more than that. I was afraid of what seemed some very precise cautions in his instructions, but last night I made it all the way through his prescriptions, and the result fulfilled all my expectations.

Oh, and because Barry knew he’d need many glasses of water during dinner, because of the heat, he let me have the rest of his bottle of Gerolsteiner, which is naturally carbonated. It’s probably my favorite for-profit water, although the fact that it has to be shipped all of the way from my family’s Heimat is problematic, and also makes it only a special occasion indulgence.

  • two 8-ounce striped bass filets from American Seafood Company removed from refrigeration, salted a little, allowed to rest at room temperature for 20 minutes, and while a seasoned steel pan was heating up above a high flame, the skin side scraped with a butter knife to remove excess moisture, both sides patted dry with a paper towel, a tablespoon, or a little more, of Mac Nut  macademia nut oil from Whole Foods Market poured into the pan and swirled to cover the bottom and heat the oil, the filets placed skin side down inside it, immediately jiggled to ensure that the fish doesn’t stick, the flesh side of the filets salted and the heat turned down to medium-high, the filets pressed down lightly with a spatula for 30 to 60 seconds, to ensure that the skin browns evenly, cooked without moving them for 3 or 4 minutes, then, the pan shaken to see that the filets moved easily, the bass turned over with the spatula while stabilizing them with the help of a free hand, and cooked  for another minute, maybe a bit more, and the heat turned off, roughly half of the way through, a tablespoon and a half of rich 12% fat butter added to the pan, swirled so it melted swiftly, and a generous bit of micro sorrel from Windfall Farms tossed into the butter and mixed with it, the pan tilted and the sauce poured onto the plates, the filets placed on top of the sauce, sprinkled with some scissored spring shallot blossoms from Keith’s Farm

  • a few stems of spring flowering shallots from Keith’s Farm, chopped, sautéed lightly inside an antique medium copper pan in a little olive oil,followed by two handfuls of very ripe red and golden grape tomatoes from Alex’s New Jersey Tomato Farm, at Chelsea’s Down to Earth Farmers Market on 23rd Street, washed, halved, heated, sprinkled with sea salt and freshy-ground black pepper, tossed with some beautiful summer savory from Alewife Farm, chopped

  • some second-growth asparagus from Berried Treasures Farm, in many lengths and thicknesses, trimmed, the stems of the few larger ones peeled, tossed gradually, the thickest spears first, in a tablespoon of butter and less than a tablespoon of olive oil heated inside a large enameled rectangular cast iron pan, then sautéed over medium high heat while frequently rolling or turning them until they were beginning to brown (about 15 minutes), finished with a sprinkling of Maldon salt and freshly-ground black pepper, sprigs of lovage from Two Guys from Woodbridge tossed in with the asparagus part of the way through their cooking
  • the wine was an American (Long Island) rosé (from grapes and a winery near the home port of the boat that brought in the bass, Wolffer Estate, Long Island Rose, 2017, from Flatiron Wines
  • the music was Counterstream Radio, streaming

sea bass on a bed of mushrooms and ramps; grilled tardivo

Last night I tweeted that I had found my go-to recipe for sea bass. I’ll elucidate.

I had arrived early (early for me) at the greenmarket that day, so there was a huge selection at the fish stand. Filtering out the various finfish and shellfish I’d cooked recently, which accounted for a good number, I narrowed our dinner choice down to 2 very fresh half-pound sea bass fillets. A few minutes later I found some terrific-looking greens, and a favorite crunchy multigrain baguette.

I thought I was all set, but once I arrived home I remembered that I had a lot of ramps, and a small bag of oyster mushrooms in the refrigerator.  I had been determined to prepare the fish in the most minimal way I could this time, and concentrate on producing a beautiful crispy skin, so I worked at coming up with a recipe that would fit the new program. What you see above was the product, and the tweet described my excitement with the result.

I’m only sorry I didn’t spend a little more time on the photograph above, because the meal tasted far more exciting than it looks.

I placed some radishes on the kitchen counter for the cook and his muse to nibble on while before the meal was served.

Otherwise the dinner was contained in one course.

  • *three stems of spring garlic from from John D. Madura Farm, cut into one-inch lengths, sautéed until softened in a little Whole Foods Market Portuguese house olive oil and Organic Valley ‘Cultured Pasture Butter’ inside a large rectangular, enameled cast iron pan over medium heat, then removed and discarded, or maybe set aside for another day [NOTE: this first step, in which mature garlic could be substituted at other times of the year is definitely optional, especially if the cook is in a hurry], a little more oil and butter added, the flame raised to medium-high and two nearly-8-ounce sea bass fillets from Pura Vida Seafood Company, previously rinsed, dried with paper towels, and seasoned with sea salt, added to the pan and seared, skin side down first, for 3 to 4 minutes (the skin should be nicely golden and fairly crisp by then), turned over and cooked for another minute or so, removed and placed on 2 plates, kept warm, either in a warm oven or tented with aluminum foil, while 2 ounces of chopped yellow oyster mushrooms from Blue Oyster Cultivation were added to the skillet and sautéed until slightly undercooked, more oil added once again, if necessary, and a dozen or so trimmed and washed young ramps from Lucky Dog Organic Farm tossed in (the bulbs chopped, the greens sliced), and sautéed for roughly one minute, the ramps and mushrooms divided between the 2 warm plates and a bass fillet placed on each ‘bed’, finished with a generous squeeze of an organic Whole Foods Market lemon, and garnished with chopped bronze fennel from Norwich Meadows Farm, ending with lemon wedges placed on the side of the plates [NOTE: the mushrooms are an option, and their quantity can vary a bit, but they really enrich the flavors of both the fish and the ramps]

cooks critique: the bed of mushrooms and ramps should have been more visible; and while I eventually realized the bass had in fact been cooked perfectly, there was a scary moment after I first cut into one of the fillets to check its color and opacity (it’s no fun even contemplating having to return any seafood to a heat source once it’s arrived on the plate); finally, I described it as my “go-to recipe now for sea bass, and yet it clearly includes a few very specifically-seasonal ingredients, so my explanation is that all of those lend themselves to one or more substitutions (mature garlic for spring garlic; any mushrooms, even reconstituted ones, for the oyster mushrooms; almost anything green, herb or vegetable, for the ramps; and all kinds of herbs or micro greens would love to stand in for the bronze fennel

  • slices, or more like wedges, of a terrific multigrain baguette from Bread Alone
  • one small head of a northern Italian tardivo radicchio from Flatiron Eataly [I felt guilty that it wasn’t local, but it looked so pretty on the shelf, I love that very special chicory, and I realized it meant I wouldn’t have to wait maybe 6 months for the wonderful Campo Rosso Farm‘s crop for my next hit], washed under cold running water, the moisture shaken off, cut in 4 sections lengthwise and a V-cut made most of the way through the root end, allowing that part to cook more rapidly, tossed with a little olive oil, sea salt, and freshly-ground black pepper, arranged inside an enameled cast iron pan over medium-high heat, one of their cut sides down, each covered with a couple of rosemary sprigs from Stokes Farm, cooked for a few minutes then turned onto a second cut side and cooked for a few more, and finally turned and cooked briefly onto the third, before they were arranged on the plates [note: the tardivo can be served either hot or warm, so it’s an excellent low-stress accompaniment to meats or fish]
  • the wine was a California (Sonoma) white, Jacqueline Bahue Carte Blanche Sauvignon Blanc Sonoma Valley 2017, from Naked Wines
  • the music was the Berlin Classics album, ‘Vivaldi: La Venezia di Anna Maria’
