{"id":9938,"date":"2016-10-08T01:31:59","date_gmt":"2016-10-08T01:31:59","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=9938"},"modified":"2016-10-08T01:31:59","modified_gmt":"2016-10-08T01:31:59","slug":"radish-crab-cakes-sun-gold-tomato-salsa-purple-broccoli","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=9938","title":{"rendered":"radish; crab cakes, sun gold tomato salsa; purple broccoli"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9939\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/10\/crab_cakes_broccoli.jpg\" alt=\"crab_cakes_broccoli\" width=\"600\" height=\"450\" \/><\/p>\n<p>The beautiful colors weren&#8217;t the half of it.<\/p>\n<p>Ultimately it was the taste that we remember.<\/p>\n<ul>\n<li>two crab cakes from PE &amp; DD Seafood (the ingredients are crab, egg, flour, red &amp; green peppers, garlic, salt, pepper, breadcrumbs, mayonnaise, milk, celery, and parsley), seared\/heated in a\u00a0cast iron\u00a0pan, 2\u00a0to 3\u00a0minutes for\u00a0each side,\u00a0served on 2 plates surrounded by a salsa composed of quartered sun gold cherry tomatoes from Lani\u2019s Farm, a little\u00a0chopped red scallion from\u00a0Norwich Meadows Farmsalt, freshly-ground black pepper, a bit of homemade French Basque\u00a0<em><a href=\"https:\/\/en.wikipedia.org\/wiki\/Espelette_pepper\">piment d\u2019Espellate<\/a><\/em>\u00a0purchased in a small town north of Baie-Comeau, Quebec last year from the producer\u2019s daughter, much of one small red <a href=\"http:\/\/www.specialtyproduce.com\/produce\/Calabrian_Chile_Peppers_12814.php\">Calabrian chili pepper<\/a> from <a href=\"http:\/\/vegetabletravels.com\/farms\/#\/campo-rosso-farm\/\">Campo Rosso Farm<\/a>, and some torn fresh basil, also from Campo Rosso Farm, after which the \u2018cakes\u2019 and salsa were scattered\u00a0with micro scallions from Two Guys from Woodbridge<\/li>\n<li>one modest-size purple broccoli head\/branch from Tamarack Hollow Farm, the florets separated\u00a0and the stem[s] sliced fairly thinly, tossed in a little olive oil, salt, pepper, and dried pepperoncino, spread onto a ceramic oven pan, roasted at 400\u00ba for about 20 minutes, removed from the oven, and, when the pan had begun to cool down, drizzled with a little lemon juice and olive oil, stirred and served<\/li>\n<\/ul>\n<p><img decoding=\"async\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/10\/purple_broccoli.jpg\" \/><\/p>\n<ul>\n<li>We nibbled on <a href=\"https:\/\/en.wikipedia.org\/wiki\/Raphanus_caudatus\">rat-tail radish<\/a>\u00a0from Alewife Farm, and sipped\u00a0a little wine while the meal was being put together.<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9940\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/10\/rat-tail_radishes.jpg\" alt=\"rat-tail_radishes\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>the wine was a French (Loire) white, \u00a0<a href=\"http:\/\/www.chelseawinevault.com\/jean-pascal-aubron-gros-plant-du-pays-nantais-folle-blanche-2014\">Jean Pascal Aubron Folle Blanche Gros Plant Du Pays Nantais 2014<\/a>\u00a0(more <a href=\"http:\/\/tedwardwines.com\/producers\/domaine-jean-aubron\">here<\/a> on the wine and the vigneron)<\/li>\n<li>the music included\u00a0a\u00a0work for flute, oboe, clarinet, bassoon, and percussion, with orchestra,\u00a0<a href=\"http:\/\/iceorg.org\/blog\/post\/dai-fujikura-on-mina\">&#8216;Mina&#8217;, by the composer Dai Fujikura<\/a>, available on <a href=\"https:\/\/play.spotify.com\/album\/4vuWIbJ8RLnp8cDqSjLnaH?play=true&amp;utm_source=open.spotify.com&amp;utm_medium=open\">Spotify<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>The beautiful colors weren&#8217;t the half of it.
