{"id":9805,"date":"2016-09-27T21:21:34","date_gmt":"2016-09-27T21:21:34","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=9805"},"modified":"2016-09-27T21:21:34","modified_gmt":"2016-09-27T21:21:34","slug":"baked-cod-parsley-micro-radish-sauteed-cucumbers-dill","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=9805","title":{"rendered":"baked cod, parsley, micro radish; saut\u00e9ed cucumbers, dill"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9815\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/09\/Ligurian_cod_cucumbers.jpg\" alt=\"ligurian_cod_cucumbers\" width=\"600\" height=\"450\" \/><\/p>\n<p>Comfort food: plain fish and potatoes.<\/p>\n<p>Cod, to be specific;\u00a0<em>salted<\/em> cod, but not &#8216;<a href=\"https:\/\/en.wikipedia.org\/wiki\/Dried_and_salted_cod\">salt cod<\/a>&#8216;.<\/p>\n<p>And Carola,\u00a0to continue with specifics; originated in Germany, even better than Yukon.<\/p>\n<p>I know there are absolutely no cod\u00a0on the shores of Liguria, so the name of this recipe, &#8216;Ligurian Cod&#8217;, isn&#8217;t authentic, but the taste sure is. \u00a0The recipe is called \u2018<a href=\"http:\/\/cooking.nytimes.com\/recipes\/1844-ligurian-fish-and-potatoes\">Ligurian fish and potatoes<\/a>\u2018, although\u00a0its author appears to have been pretty casual about the origin of the fish varieties he suggests; I assume it&#8217;s about availability this far from the Mediterranean.<\/p>\n<p>It&#8217;s Mark Bittman&#8217;s recipe (or at least the one that appears in his <a href=\"http:\/\/www.nytimes.com\/2004\/12\/01\/style\/dining\/the-minimalist-good-news-nothings-new-in-italy.html\">2004 article in the New York Times<\/a> is my source), but I&#8217;ve been using it for so long I think of it as an adopted child.<\/p>\n<p>This is another of those meals that we usually have to wait for\u00a0cool weather to enjoy, because there&#8217;s definitely an oven involved.<\/p>\n<p>It&#8217;s a wonderful dish, and very easy to put together.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9823\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/09\/pan_Ligurian_cod.jpg\" alt=\"pan_ligurian_cod\" width=\"600\" height=\"450\" \/><\/p>\n<p>The picture above was taken just before the cod\u00a0was\u00a0placed in the oven.<\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>one 17-ounce cod fillet from P.E. &amp; D.D. Seafood\u00a0at the Union Square Greenmarket, prepared along the lines of\u00a0a\u00a0<a href=\"http:\/\/dinersjournal.blogs.nytimes.com\/2008\/12\/10\/recipe-of-the-day-ligurian-fish-and-potatoes\/\">recipe<\/a> from <a href=\"http:\/\/markbittman.com\/\">Mark Bittman<\/a>\u00a0which I came across almost\u00a012 years ago: I cut the fillet into\u00a0three pieces (2 of them equaling the weight of the third, and laid\u00a0them on a bed of coarse sea salt, then completely covered them\u00a0with more salt, setting them\u00a0aside\u00a0while I sliced, to a thickness of less than 1\/4 inch about 14 ounces of\u00a0small carola potatoes (yellow flesh, creamy) from Keith\u2019s Farm, tossed\u00a0them with a tablespoon\u00a0of olive oil, salt, and pepper, scatterd them in a ceramic baking pan, cooked them for 30 minutes or so in a 400\u00ba oven, or until they were tender,\u00a0meanwhile thoroughly immersing the cod in several changes of water\u00a0and drying the two pieces\u00a0before placing them\u00a0in the pan on top of the potatoes, topping the fish with a little olive oil and scattering them with some\u00a0freshly-ground pepper, returned the pan to the oven\u00a0for\u00a08 to 12 minutes (the time would depend on the\u00a0thickness of the cod), arranged on 2 plates, chopped parsley from Keith&#8217;s Farm sprinkled on top, finished with a scattering of purple micro beets from Two Guys from Woodbridge<\/li>\n<li>Chinese cucumbers from Norwich Meadows Farm, sliced into bitesize pieces, saut\u00e9ed in olive oil until lightly browned, seasoned with sea salt, sprinkled with chopped dill from\u00a0Willow Wisp Farm<\/li>\n<li>the wine was a Spanish (Rueda) white, <a href=\"http:\/\/www.bodegasnaia.com\/naia-2010-en\">Naia D.O.
