Seafood, washed, drained and <em>very<\/em> thoroughly dried\u00a0on paper towels (twice), generously seasoned with salt and pepper, pan grilled for about 90 seconds on each side, finished with a squeeze of lemon and\u00a0a scattering of purple micro radish from Two Gus from Woodbridge, then drizzled with some good olive oil<\/li>\n<li>more than a handful of red and orange cherry tomatoes, halved, from Lower Hayfields, a friend\u2019s garden in the Hudson River town of Garrison,\u00a0heated briefly in olive oil, seasoned with salt and pepper, a bit of New York CIty basil from Gotham Greens, via Whole Foods, torn, mixed in, and served dusted with micro bronze fennel, also from Two Guys from Woodbridge<\/li>\n<li>curly kale, again from\u00a0Lower Hayfields, wilted in a little\u00a0olive oil in\u00a0which several bruised organic garlic cloves from Willow Wisp Farm had first been heated or \u2018sweated\u2019 in the oil with a small amount of crushed dried Sicilian pepperoncino from Buon Italia, seasoned with salt and pepper, and, once on the plates, drizzled with olive oil<\/li>\n<li>the wine was a French (Savoie) white, <a href=\"http:\/\/www.chelseawinevault.com\/all\/jean-perrier-et-fils-vin-de-savoie-abymes-gastronomie-2015#.V961luv3arU\">Jean Perrier et Fils Cuv\u00e9e Gastronomie Savoie Abymes 2015<\/a><\/li>\n<li>the music was\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=799322\">Johann Friedrich Fasch, &#8216;Orchestral Works, Vol. 3&#8217;<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>fourteen medium scallops from P.E. &amp; D.D.
