On Tuesday evening I finished the second half of my\u00a0package of\u00a0their \u2018Rye Trumpets\u2019 (the Italians\u00a0call the shape, \u2018campanelle\u2019, or bells, suggesting\u00a0<a href=\"http:\/\/cdn-ak.f.st-hatena.com\/images\/fotolife\/e\/elmikamino\/20070610\/20070610135622.jpg\">these<\/a>), this time adding\u00a0an ingredient as rare as, or more rare than that pasta: saut\u00e9ed cucumbers; more exotic still, they were a variety\u00a0most people have never seen, <a href=\"http:\/\/makelunchnotwar.blogspot.com\/2009\/08\/cucumber.html\">Jamaica Burr<\/a>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9549\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/09\/Jamaica_burr_cucumbers.jpg\" alt=\"Jamaica_burr_cucumbers\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>Jamaica Burr cucumbers from Norwich Meadows Farm, sliced about\u00a01\/4&#8243; thick, dried, saut\u00e9ed in\u00a0a little olive oil over a fairly high flame until beginning to color, and then one very small, seeded, finely-chopped\u00a0red Calabrian pepper from Campo Rosso Farm and several chopped scallions added, in that order, near the end, the vegetables seasoned with salt and pepper before they were mixed with half a pound of Sfoglini rye blend &#8216;trumpets which were cooked seriously <em>al dente<\/em>, everything (including some\u00a0of the reserved pasta water) tossed and stirred over a low-to-moderate flame for a couple of minutes to blend the flavors and the ingredients, served sprinkled with fennel flowers from Ryder Farm<\/li>\n<li>the wine was an Italian (Alto Adige\/S\u00fcdtirol) white,\u00a0from <a href=\"http:\/\/www.chelseawinevault.com\/\">Chelsea Wine Vault<\/a>,\u00a0<a href=\"http:\/\/www.wagners-weinshop.com\/weine-europa\/italien\/sudtirol\/manincor\/la-manina.html\">La Manina\u00a0Manincor\u00a02013<\/a><\/li>\n<li>the music was Mozart divertimentos\/serenades, from the 3-disc album, &#8216;<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=6794\">Mozart: Complete Wind Music<\/a>&#8216;, in performances by\u00a0the\u00a0London Wind Soloists , directed by\u00a0Jack Brymer<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I\u2019ve written before about how much I like Sfoglini pasta (quality, variety of forms and content, seasonal specialties, local origin,\u00a0striated surfaces).
