{"id":9525,"date":"2016-09-07T01:55:03","date_gmt":"2016-09-07T01:55:03","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=9525"},"modified":"2016-09-07T01:55:03","modified_gmt":"2016-09-07T01:55:03","slug":"steak-micro-radish-okra-chili-breadcrumbs-peppers-basil","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=9525","title":{"rendered":"steak, micro radish; okra, chili, breadcrumbs; peppers, basil"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9526\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/09\/tri-tip_tiny_peppers-tiny_okra.jpg\" alt=\"tri-tip_tiny_peppers-tiny_okra\" width=\"600\" height=\"450\" \/><\/p>\n<p>The steak was familiar, even to the topping, and so was the okra, even if these were the smallest I had ever cooked, or seen, for that matter.\u00a0The sweet peppers looked\u00a0only a little like any I had seen before, and they were definitely smaller than any I had cooked until last night.<\/p>\n<p>I bought the okra because this scant\u00a0handful was all that was left in the plastic basket in the farm stall;\u00a0they looked lonely and they were cute.<\/p>\n<p>The peppers, I was assured by the farmer,\u00a0<a href=\"http:\/\/www.epicurious.com\/archive\/blogs\/editor\/2013\/11\/young-passion-young-farmers-radicchio-treviso.html\">Chris Field<\/a>,\u00a0were not spicy; I love peppers in any form, and I decided these tiny ones\u00a0could also liven up a meal with their color. I never\u00a0suspected\u00a0that they would have a very distinctive flavor, and that they\u00a0would almost pop inside the mouth, both properties\u00a0a bit like\u00a0the South African &#8216;<a href=\"https:\/\/en.wikipedia.org\/wiki\/Peppadew\">Peppedew<\/a>&#8216;. \u00a0While talking to Chris\u00a0at his\u00a0stand on Saturday, I forgot to ask what they are called, but I may have found an answer\u00a0while looking on line today: the name may be &#8216;Little-Beak Peppers&#8217;, or &#8216;<em>Pimenta Biquinho&#8217;.<\/em><\/p>\n<p>I didn&#8217;t think I would be serving the little\u00a0okra and peppers\u00a0together (way too cute), but that&#8217;s what happened when I lined up the alternatives for 3 meals this weekend.<\/p>\n<p>Yeah, it was pretty cute.<\/p>\n<ul>\n<li>two very juicy\u00a0tri-tip steaks (each just under 7\u00a0ounces)\u00a0from Dickson\u2019s Farmstand Meats, brought to room temperature, dried and sprinkled generously with freshly-ground tellicherry pepper on both sides, pan-grilled for a few minutes, turning twice (sprinkling them with sea salt the first and second times they were turned), removed to 2\u00a0plates, a little lemon juice squeezed on top, drizzled with olive oil, purple micro radish from Two Guy From Woodbridge sprinkled over the top<\/li>\n<li>barely a handful of tiny okra from Norwich Meadows Farm, saut\u00e9ed over a high flame in a cast iron pan with\u00a0a little olive oil and a good\u00a0part of one\u00a0small red Calabrian pepper from Campo Rosso Farm, seasoned with sea salt, divided onto the 2 plates, scattered with homemade\u00a0breadcrumbs (browned a little earlier in a little olive oil with a pinch of salt)<\/li>\n<li>tiny red and yellow peppers (not at all spicy hot) from Campo Rosso Farm, saut\u00e9ed a few minutes inside a copper skillet with a little olive oil, ending with a very small amount of balsamic vinegar,\u00a0seasoned with salt and pepper, torn basil leaves mixed in, as they finished cooking<\/li>\n<li>the wine was a California (Clarksburg) red,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/karen-birmingham-petite-sirah-clarksburg-2014.htm\">Karen Birmingham Petite Sirah Clarksburg 2014<\/a><\/li>\n<li>the music was that of Hanns Eisler and Paul Dessau, from the album, <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=210905\">&#8216;Nova &#8211; Sinfonik In Der Ddr\u00a0&#8211; East German Symphonies&#8217;<\/a>,\u00a0the day being\u00a0American &#8216;Labor Day&#8217;, and, although &#8220;..officially held in highest esteem, [these 2 East German composers] both challenged the regime artistically.&#8221; [excerpted from the album notes &#8211; Ed.]<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>The steak was familiar, even to the topping, and so was the okra, even if these were the smallest I had ever cooked, or seen, for that matter.\u00a0The sweet peppers looked\u00a0only a little like any I had seen before, and they were definitely smaller than any I had cooked until last night.
