{"id":9294,"date":"2016-08-23T01:25:39","date_gmt":"2016-08-23T01:25:39","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=9294"},"modified":"2016-08-23T01:25:39","modified_gmt":"2016-08-23T01:25:39","slug":"lamb-chops-fennel-blossoms-grilled-tomato-squash-mint","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=9294","title":{"rendered":"lamb chops, fennel blossoms; grilled tomato; squash, mint"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9295\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/08\/lamb_chops_tomato_squash.jpg\" alt=\"lamb_chops_tomato_squash\" width=\"600\" height=\"450\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9297\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/08\/banana_tomatoes.jpg\" alt=\"banana_tomatoes\" width=\"600\" height=\"450\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9298\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/08\/summer_squash.jpg\" alt=\"summer_squash\" width=\"600\" height=\"450\" \/><\/p>\n<p>I could never even think about making this dinner if we didn&#8217;t have\u00a0pretty decent air conditioning in both our\u00a0kitchen and informal dining area (for that matter, I have to say the same thing for <em>most<\/em> of the meals I&#8217;ve\u00a0been preparing for many weeks.<\/p>\n<p>With sincere\u00a0gratitude\u00a0to the cooling gods, and to all those oleaginous dinosaurs who never knew what was coming, I was able to offer\u00a0us another pretty decent meal on Sunday.<\/p>\n<p>Looking back over those of the last few months at the least, this one was exceptional in the fact that it\u00a0included lamb chops.\u00a0Although they don&#8217;t require an oven, and so would seem to be a good choice\u00a0if\u00a0meat is to be a choice, they have just not seemed appropriate during this interminable plague of warm and humid days and nights.<\/p>\n<p>We&#8217;ve also become more and more fond of seafood, and my confidence in preparing it continues to grow.<\/p>\n<p>While in the Greenmarket on Saturday I was excited to\u00a0come upon Karen Weinberg,\u00a0of 3-Corner Field Farm, for the first time since spring lambing season. I had forgotten that until the fall she was only in the market\u00a0on Saturdays, and until last week I hadn&#8217;t been shopping on that day\u00a0for months. Honoring the\u00a0serendipity of our\u00a0meeting, I\u00a0defrosted the 4 chops I bought, making them the\u00a0highlight of a\u00a0Sunday dinner.<\/p>\n<ul>\n<li>four loin lamb chops (a total of 1.15 pounds) from\u00a0<a href=\"http:\/\/www.dairysheepfarm.com\/\">3-Corner Field Farm<\/a>,\u00a0cooked on a very hot grill pan for about 5 or\u00a06\u00a0minutes on each side, seasoned with salt and pepper after they were first turned over, finished with a squeeze of lemon juice, a scattering of fresh fennel flowers from Mountain Sweet Berry Farm, and a drizzle of olive oil<\/li>\n<li>halved and seasoned very ripe\u00a0red banana tomatoes\u00a0from Norwich Meadows Farm, pan-grilled,\u00a0finished with a\u00a0small drizzle\u00a0of olive oil and a bit of balsamic vinegar<\/li>\n<li>8 very small green and yellow summer squash from Berried Treasures Farm, sliced into thick disks, saut\u00e9ed with 2 garlic cloves from Norwich Meadows farm, halved, until\u00a0they had begun to caramelize, 3 red scallions, sliced, and parts of one &#8216;cherry bomb&#8217; (or &#8216;red bomb&#8217;) pepper from Norwich Meadows Farm, added, the mix\u00a0continued to be stirred over a lowered flame until they too were softened and had become fragrant, the pan removed from the flame and spearmint from Ryder Farm and lovage from Keith&#8217;s Farm, both chopped, mixed into the vegetables<\/li>\n<li>the wine was a super Italian (Sicily) red,\u00a0<a href=\"http:\/\/www.astorwines.com\/SearchResultsSingle.aspx?p=1&amp;search=31545&amp;searchtype=Contains\">Etna Rosso, Tenuta delle Terre Nere 2014<\/a>, from Astor WInes &amp; Spirits<\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=66714\">Jean-Baptiste Lully&#8217;s 1676 opera, &#8216;Atys&#8217;, with\u00a0William Christie and Les Arts Florissants<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I could never even think about making this dinner if we didn&#8217;t have\u00a0pretty decent air conditioning in both our\u00a0kitchen and informal dining area (for that matter, I have to say the same thing for most of the meals I&#8217;ve\u00a0been preparing for many weeks.
