Respecting both their modest portion and high quality, we lingered, with a great wine from the Canary Islands.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-9197\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/08\/Lanzarote-1-1024x576.jpg\" alt=\"Lanzarote\" width=\"620\" height=\"349\" \/><\/p>\n<p>The vineyards of <a href=\"https:\/\/en.wikipedia.org\/wiki\/Lanzarote\">the Lanzarote DO wine region<\/a><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>one 10-ounce swordfish steak from P.E. &amp; D.D. Seafood,\u00a0in the Union Square Greenmarket, marinated for about\u00a0half hour\u00a0in a mixture of olive oil, a very small amount of crushed dried Itria-Sirissi chili, peperoncino di Sardegna intero from Buon Italia, fresh oregano buds from Stokes Farm, torn spearmint from Ryder Farm, and the white sections of\u00a02\u00a0finely-sliced tiny French leeks from Mountain Sweet Berry Farm,\u00a0drained well and covered with a coating of dried homemade bread crumbs, pan-grilled over medium-high heat for 4\u00a0to\u00a05 minutes on each side,\u00a0removed, seasoned with a little sea salt, sprinkled with a little organic lemon juice from Whole Foods, a pinch of\u00a0<a href=\"http:\/\/www.thekitchn.com\/how-to-use-fennel-pollen-65434\">wild\u00a0fennel pollen<\/a> from Buon Italia, some chopped\u00a0green leaves from\u00a0the French leeks, finely sliced and heated in a small sauce pan with a little\u00a0olive oil until they had softened and become more mild, sprinkled with chopped dill from Keith&#8217;s Farm<\/li>\n<li>Swiss\u00a0chard from Ryder\u00a0Farm, saut\u00e9ed in\u00a0olive oil in which 5 small\u00a0bruised garlic cloves from Keith&#8217;s Farm had first been heated, finished with a squeeze of juice from an organic\u00a0lemon, some\u00a0crushed\u00a0dried Itria-Sirissi chili, and a drizzle of lemon and a drizzle of olive oil<\/li>\n<li>one green heirloom tomato from\u00a0Eckerton Hill Farm, cut into fork-size pieces, dressed with a campania olive oil (Syrenum D.O.P. Peninsula Sorrentina), Maldon salt, freshly-ground pepper, and chopped lovage from Keith&#8217;s Farm, served in small side dishes<\/li>\n<li>slices of a \u2018Compagne\u2019 (traditional sourdough) from Bien Cuit Bakery, via Foragers Market<\/li>\n<li>the wine was a Spanish (Lanzarote, in the Canary Islands) ros\u00e9, <a href=\"http:\/\/www.losbermejos.com\/\">Los Bermejos<\/a>\u00a0<a href=\"http:\/\/www.shop.appellationnyc.com\/r\/products\/10955378\/bodega-los-bermejos-listan-negro-rosado-2015\">List\u00e1n Rosado 2015, from Appalachian Wines<\/a><\/li>\n<li>the music was the remainder of the opera from the night before,\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=87210\">Vivaldi\u2019s 1714 opera, \u2018Orlando Finto Pazzo\u2019<\/a>,\u00a0Alessandro De Marchi directing the Academia Montis Regalis and the Turin Teatro Regio Chorus<\/li>\n<\/ul>\n<p>[image of the volcanic stone-walled vinyards from the <a href=\"http:\/\/en.losbermejos.com\/index\/cultivos\">Los Bermejos site<\/a>]<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The swordfish steak was smaller than I would have liked, but the alternatives weighed far more than a pound. \u00a0More problematic was the pronounced wedge shape of the piece, but I\u00a0managed to &#8216;square&#8217; it with the judicious placement of 2\u00a0toothpicks.
