{"id":9119,"date":"2016-08-12T23:51:31","date_gmt":"2016-08-12T23:51:31","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=9119"},"modified":"2016-08-12T23:51:31","modified_gmt":"2016-08-12T23:51:31","slug":"garlic-onion-penne-chili-herb-tomato-frittata-micro-radish","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=9119","title":{"rendered":"garlic-onion-penne-chili-herb-tomato frittata, micro radish"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9122\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/08\/tomato-pepper-pasta-frittata.jpg\" alt=\"tomato-pepper-pasta-frittata\" width=\"600\" height=\"450\" \/><\/p>\n<p>Peppers aborted, then redeemed.<\/p>\n<p>We like hot peppers, and we can normally take the heat, but\u00a0earlier this week\u00a0one variety new to us\u00a0turned out to be\u00a0far\u00a0more fiery\u00a0than anything we had experienced before. \u00a0Neither of us was\u00a0able to finish a\u00a0small appetizer plate of this pepper\u00a0(something like a Padron or Shishito),\u00a0which I had served as an appetizer for <a href=\"http:\/\/food.hoggardwagner.org\/2016\/08\/09\/porgy-herbs-oxalis-garlic-oregano-eggplant-fennel-buds\/\">this meal<\/a>, and then had to abort most of it. But I didn&#8217;t want to give up on\u00a0those remaining\u00a0on the plate, thinking at the time,\u00a0if\u00a0too much of a good thing is not so good, just the right amount of a good thing might be very good.\u00a0I thought that the\u00a0peppers should\u00a0have a second chance, this time subsumed into a frittata with other, far tamer\u00a0ingredients, making\u00a0an ordinary dish more complex, and delicious,\u00a0than it would\u00a0be without them. I put the remaining peppers, as they were (already-saut\u00e9ed and salted), into the refrigerator next to a small bowl of some plain, cooked penne remaining from <a href=\"http:\/\/food.hoggardwagner.org\/2016\/08\/07\/caprese-radicchio-pasta-2-fennels-2-peppers-allium-chili\/\">another meal<\/a> 2 nights\u00a0before.<\/p>\n<p>Last night it finally all came together.<\/p>\n<ul>\n<li>one large garlic clove from Keith&#8217;s Farm, sliced, saut\u00e9ed slowly inside a 10&#8243; seasoned cast iron pan in a little olive oil with some sliced red scallions from\u00a0Rise &amp; Root Farm until both were softening\u00a0and fragrant, a handful of small\u00a0hot green peppers from Campo Rosso Farm which had been saut\u00e9ed in oil a few days before, and\u00a0some\u00a0cooked\u00a0<a href=\"http:\/\/setaro%20penne%20rigatoni%20from%20buon%20italia\/\">Setaro Penne Rigatoni<\/a>\u00a0(the equivalent of 4 ounces of dried\u00a0pasta), halved in its lengths with a kitchen shears, both stirred in the pan and heated, followed by a mixture of 8 eggs from Millport Dairy Farm which had been whipped with 3 tablespoons of the pasta water, sea salt, freshly-ground pepper, and a mix of chopped herbs (parsley, lovage, tarragon, savory, thyme, and mint), and when that had been settled, torn basil from Keith&#8217;s Farm scattered over the egg mixture and 6 slices of one large, ripe heirloom tomato from Eckerton Hill Farm placed on top, the frittata allowed to cook slowly on top of the stove until the outer layer of egg had set, when it was\u00a0placed in a broiler for barely a couple of minutes, or until\u00a0the center was no longer runny, removed, scattered with some beautiful micro radish greens from Two Guys from Woodbridge and allowed to cool for a few minutes before serving, supported by an iron trivet on the counter, when it was sprinkled lightly with a very good Campania olive oil<\/li>\n<li>the wine was a California (Lodi) white,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/s-a-verdelho-calaveras-county-2014.htm\">S + A Verdelho Calveras County 2015<\/a>\u00a0[this vintage is now out of stock; the link is to the 2014]<\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=126439#review\">Antonio\u00a0Salieri&#8217;s 1785 opera, &#8216;La Grotta Di Trofonio&#8217;, in a performance of\u00a0Christophe Rousset,\u00a0Les Talens Lyriques, and the Lausanne Theatre Municipal Opera Chorus\u00a0<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Peppers aborted, then redeemed.
