Still, even unembellished,\u00a0the entr\u00e9e was scrumptious;\u00a0I don&#8217;t think it could have been improved.<\/p>\n<p>Porgy is a magnificent fish, <a href=\"http:\/\/food.hoggardwagner.org\/?s=porgy\">as I&#8217;ve written here before<\/a>, and these pale-green long eggplants (I did not get their name from the farmer, but I will ask) were incredibly juicy and sweet.<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-9087\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/08\/green_eggplant.jpg\" alt=\"green_eggplant\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>two 5 1\/2-ounce Porgy fillets from\u00a0P.E. &amp; D.D. Seafood, dried, seasoned with salt and pepper, pan-seared, along with a\u00a0thinly-sliced red scallions from Rise &amp; Root Farm, over medium heat inside an oval copper pan in a bit of butter and a little olive oil, the fish basted, using a small brush,\u00a0with the the scallion\u00a0butter and oil for about 2 minutes, more or less continually, then carefully turned over, the heat reduced to low, a cover (I used aluminum foil) placed on the pan\u00a0and the filets\u00a0cooked for about another minute before the cover was removed and 2\u00a0or 3\u00a0tablespoons of mixed fresh herbs thrown in (I used parsley, lovage, tarragon, savory, thyme,\u00a0and mint this time), after which\u00a0the basting continued for about another minute, or until the fish was cooked through, at which time the fillets were arranged on the 2 plates, and\u00a0a small handful of stemmed oxalis from Alewife Farm was thrown into the pan, stirred for a few seconds, scooped up with\u00a0the juices and sprinkled\u00a0on top\u00a0(the recipe has been\u00a0slightly\u00a0modified from <a href=\"http:\/\/www.nytimes.com\/recipes\/1015082\/pan-seared-tilefish-with-garlic-herbs-and-lemon.html\">one written by\u00a0Melissa Clark<\/a>)<\/li>\n<li>three medium long pale-green\u00a0eggplants from Campo Rosso\u00a0Farm, split lengthwise, scored, brushed with a mixture of oil, finely-chopped garlic from Keith\u2019s Farm, and chopped fresh budding oregano from Stokes Farm, seasoned with salt and pepper,\u00a0pan-grilled for a few minutes, turning once, then sprinkled with fennel flowers from Mountain Sweet Berry Farm\u00a0[the basic recipe is <a href=\"https:\/\/dinnerroll.wordpress.com\/2008\/10\/27\/thousand-ridges-japanese-eggplant\/\">here<\/a>]<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>There was fruit, for a simple dessert.<\/p>\n<ul>\n<li>six small green figs (unfortunately, their origin unknown) from Eataly<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the wine throughout the meal was a South African (Paarl) white, <a href=\"http:\/\/joostenberg.co.za\/wp-content\/uploads\/2015\/05\/Joostenberg-Chenin-Blanc-2015-1.pdf\">J. Joostenberg Estate Die Agteros Chenin Blanc 2015<\/a>, purchased at <a href=\"http:\/\/www.chelseawinevault.com\/\">Chelsea Wine Vault<\/a><\/li>\n<li>the music included <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=1864496&amp;album_group=1&amp;site_id=NRAlert\">symphonies\/sinfonias\u00a0by Franz Josef Haydn and WIlhelm Friedmann Bach<\/a>, performed by\u00a0Giovanni Antonini conducting\u00a0<a href=\"http:\/\/www.ilgiardinoarmonico.com\/\">Il Giardino Armonico <\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Only after I had plated fish and the vegetables did it occur to me that they\u00a0would have looked so much better had I thought ahead and included some color, like any one or more of the tomatoes in various colors\u00a0sitting on the window sill across from the table.
