{"id":8987,"date":"2016-08-05T01:46:43","date_gmt":"2016-08-05T01:46:43","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=8987"},"modified":"2016-08-05T01:46:43","modified_gmt":"2016-08-05T01:46:43","slug":"fennel-grilled-tuna-micro-radish-greens-spigarello-tomato","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=8987","title":{"rendered":"fennel-grilled tuna, micro radish greens; spigarello; tomato"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8988\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/08\/tuna_spigarello_tomato.jpg\" alt=\"tuna_spigarello_tomato\" width=\"600\" height=\"450\" \/><\/p>\n<p>I love these colors, and\u00a0they taste as good as they look.<\/p>\n<p>On my second\u00a0run-through in\u00a0<a href=\"http:\/\/food.hoggardwagner.org\/2016\/08\/02\/flounder-tomato-scallion-tarragon-butter-spigarello-garlic\/\">preparing\u00a0spigarello<\/a>, I remembered to slip the leaves off of their somewhat sturdier\u00a0stems, but I forgot my\u00a0other major admonition: be sure to blanch this\u00a0green before saut\u00e9ing it. Unblanched, it was more than a little bitter, at least until we\u00a0squeezed more lemon and drizzled more oil on top. Three times will be perfect, nah?<\/p>\n<ul>\n<li>two small (5\u00a0or\u00a06-ounce) tuna steaks from Blue Moon Fish Company, rubbed top and bottom with a mixture of dry Italian fennel seed and one and a half dried Itria-Sirissi chilis, <em>peperoncino di Sardegna intero<\/em>, from Buon Italia, first ground together in a mortar-and-pestle, the tuna additionally seasoned with salt and pepper, pan-grilled for only a little more than a minute or so on each side, finished with a good squeeze of lemon,\u00a0a drizzle of olive oil, and a scattering of\u00a0purple radish micro greens from Two Guys from Woodbridge<\/li>\n<li>spigarello (<em>Cavolo Broccolo a Getti di Napoli<\/em>, or<em>\u00a0Minestra Nera<\/em>) from Norwich Meadow Farm, stems removed, washed,\u00a0drained, saut\u00e9ed in olive oil in which one\u00a0chopped garlic and a small amount of a chopped\u00a0cherry bomb\/red bomb pepper from Norwich Meadows Farm had first been softened, sprinkled with a little Limoneira lemon juice and drizzled with olive oil [note: these greens really have to be blanched for a couple minutes to tone down\u00a0their\u00a0natural bitterness, and I failed to do that this time]<\/li>\n<li>one yellow heirloom tomato from Keith&#8217;s Farm, sliced horizontally into four disks and placed on the plates, where it was drizzled with a good Campania olive oil, D.O.P. Penisola Sorrentina \u2018<em>Syrenum<\/em>\u2019, seasoned with Maldon salt and Tellicherry pepper, sprinkled with fresh fennel flowers from Mountain Sweet Berry Farm<\/li>\n<li>slices from a <a href=\"http:\/\/www.sullivanstreetbakery.com\/#\/bread\/\">loaf of &#8216;Commune&#8217; from Sullivan Street Bakery<\/a><\/li>\n<\/ul>\n<p>There was a cheese course.<\/p>\n<ul>\n<li>three great cheeses from <a href=\"http:\/\/www.considerbardwellfarm.com\/cheese.html\">Consider Bardwell Farm<\/a>: \u2018Dorset\u2019, a rich, buttery washed-rind\u00a0cow\u00a0milk cheese, and their 2 new-ish blues, \u2018Barden Blue\u2019, a cow cheese, and an awesome goat blue\u00a0which has not yet been named (although I&#8217;ve suggested &#8216;Wellen&#8217;)<\/li>\n<li>very thin\u00a0slices of &#8216;Commune&#8217; from Sullivan Street Bakery<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the wine was an Italian (Sicily) ros\u00e9, the sturdy\u00a0<a href=\"http:\/\/www.astorwines.com\/SearchResultsSingle.aspx?p=1&amp;search=32398&amp;searchtype=Contains\">Calabretta Terre Siciliane IGT Rosato 2014<\/a>, from <a href=\"http:\/\/www.astorwines.com\/\">Astor Wines &amp; Spirits<\/a><\/li>\n<li>the music was <a href=\"https:\/\/play.spotify.com\/album\/1sf6UNVUP2TZ77BniBv8qr?play=true&amp;utm_source=open.spotify.com&amp;utm_medium=open\">some of the symphonic music\u00a0of Joseph Boulogne<\/a>, chevalier de Saint-Georges, champion fencer, virtuoso violinist,\u00a0and conductor of the leading symphony orchestra in Paris in the late 1790&#8217;s.
