{"id":8916,"date":"2016-07-31T17:36:04","date_gmt":"2016-07-31T17:36:04","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=8916"},"modified":"2016-07-31T17:36:04","modified_gmt":"2016-07-31T17:36:04","slug":"frittata-with-peppers-scallion-chilis-herbs-spice-radicchio","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=8916","title":{"rendered":"frittata with peppers, scallion, chilis, herbs; spice; radicchio"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8919\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/pepper_frittata.jpg\" alt=\"pepper_frittata\" width=\"600\" height=\"450\" \/><\/p>\n<p>It was a simple assignment: put together an uncomplicated meal with\u00a0the first red peppers from the Greenmarket and\u00a0some of the very fresh 16 eggs I had in the refrigerator at that moment.<\/p>\n<p>To make it more interesting, something more\u00a0than that to which a frittata\u00a0might otherwise aspire, I also had on hand\u00a0some other fine\u00a0ingredients, familiar and exotic, fresh and dry.<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8929\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/red_peppers2.jpg\" alt=\"red_peppers2\" width=\"450\" height=\"600\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8922\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/red_bomb_peppers.jpg\" alt=\"red_bomb_peppers\" width=\"450\" height=\"600\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8921\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/radicchio-1.jpg\" alt=\"radicchio\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>a frittata\u00a0which began with saut\u00e9ing\u00a0in olive oil in a 12\u2033 enameled cast\u00a0iron frying\u00a0pan\u00a0half a dozen or so\u00a0sliced sweet red bell peppers from <a href=\"https:\/\/www.facebook.com\/9J-Organic-Greenhouses-140371759453429\/\">9J Organic<\/a>\u00a0(in the Union Square Greenmarket), until they had begun to carmelize, followed by some\u00a0chopped organic garlic and a little bit of cherry bomb (or red bomb) peppers from Norwich Meadows Farm, slivered, saut\u00e9ed until pungent or softened, and finally some sliced\u00a0red scallions from Paffenroth Gardens, again, stirred until softened, after which 8 medium eggs\u00a0from Millport Dairy which had been whipped with a tablespoon or so of milk, salt and pepper, and a handful of mixed herbs (basil, oregano, thyme, tarragon, and savory, all from Greenmarket farmers) were poured into the pan, the surface dusted with a pinch or so of homemade French Basque <em><a href=\"https:\/\/en.wikipedia.org\/wiki\/Espelette_pepper\">piment d\u2019Espellate<\/a><\/em>\u00a0(which we had purchased in a small town north of Baie-Comeau, Quebec last year from the producer\u2019s daughter), cooked over a low-to-moderate flame until the edges were fixed, then placed in a pre-heated broiler for a minute or so, or until the entire surface was set, finished with a sprinkling of\u00a0micro bronze fennel from\u00a0Two Guys from Woodbridge, removed, allowed to cool for a bit, quartered, and one piece\u00a0arranged\u00a0on each of 2 plates, perched on the edge some torn\u00a0radicchio from Tamarack Hollow Farm, \u00a0 which was dressed lightly withgood Campania olive oil,\u00a0<a href=\"http:\/\/www.frantoiogargiulo.com\/it\/shop\/olio-oliva-dop-sorrento\/olio-di-oliva-dop_penisola_sorrentina-_-2014-01-28-2014-01-28-detail.html\">D.O.P. Penisola Sorrentina \u201cSyrenum\u201d<\/a>,\u00a0maldon salt, and freshly-ground Tellicherry pepper<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>A few simple sweet local dark cherries from Samascott Orchards, in Kinderhook, which are\u00a0now probably at the very end of their season, were a perfect dessert.<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8923\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/cherries.jpg\" alt=\"cherries\" width=\"450\" height=\"600\" \/><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>the wine was a California (Lodi) ros\u00e9,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/karen-birmingham-rose-lodi-2015.htm\">Karen Birmingham Ros\u00e9 Lodi 2015<\/a><\/li>\n<li>the music was the 1990\u00a0opera of\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/Name\/Jukka-Romu\/Performer\/104861-2\">Einojuhani Rautavaara, &#8216;The House of the Sun&#8217;<\/a>,\u00a0Mikko Franck conducting the\u00a0Oulu Symphony Orchestra<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>It was a simple assignment: put together an uncomplicated meal with\u00a0the first red peppers from the Greenmarket and\u00a0some of the very fresh 16 eggs I had in the refrigerator at that moment.
