It really didn&#8217;t need the bed of arugula, especially since I was sprinkling the fish itself with some torn fresh basil.<\/p>\n<p>I was trying to hard to use\u00a0the arugula I had in the refrigerator door while it was still\u00a0sprightly, but also\u00a0I was distracted by both an unusually smokey kitchen (the oil-tossed squash grilling over a high flame), and my multitasking 2\u00a0other very different programs (preparing the fish and vegetables at the same time I was rendering a supply of fresh veal fat in a large pot), all inside a warm kitchen.<\/p>\n<p>[the veal fat, from <a href=\"http:\/\/www.considerbardwellfarm.com\/farm.html\">Consider Bardwell Farm<\/a> in the Union Square Greenmarket,\u00a0originated with a calf of their cow milk partner,\u00a0<a href=\"http:\/\/www.jerseygirlsdairy.com\/jersey-boyz-veal.html\">Lisa Kaiman&#8217;s Jersey Girls Dairy<\/a>\u00a0(her cow&#8217;s are Jerseys, and Lisa is from <em>New<\/em> Jersey, hence..) in Chester Vermont]<\/p>\n<p>But the air cleared, the breakfast room eventually cooled down, and we enjoyed the meal &#8211; and great conversation &#8211; including some excellent cheese, great\u00a0bread, and one of our favorite table wines.<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8900\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/patty-pan_squash.jpg\" alt=\"patty-pan_squash\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>nine quite\u00a0small <a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/09\/SeaRobin_LongIslandSound1.jpg\">sea robin<\/a> fillets, or \u2018tails\u2019, from Pura Vida Fisheries,\u00a0rinsed, pat dry, seasoned with salt and pepper, then placed in an oval heavy copper pan of sizzling olive oil, saut\u00e9ed over medium-high heat for barely\u00a02 minutes on each side, transferred to 2\u00a0plates where they were\u00a0perched on some\u00a0rocket\/arugula (\u2018wild arugula\u2019) from Migliorelli Farm, a little organic lemon squeezed on top, and small spoonfuls of a olive tapenade sauce made minutes earlier (Gaeta olives, brined wild\u00a0capers, a\u00a0salted anchovy, and some chopped fresh thyme) spread over or between the fillets, which were garnished with torn fresh basil leaves from Sycamore Farms<\/li>\n<li>four small patty pan squash from Alewife\u00a0Farm, sliced horizontally, tossed with olive oil, lemon juice, chopped fresh garlic from Alewife Farm, part of a\u00a0hot red Portugal pepper from Keith\u2019s Farm, salt, and pepper, then pan grilled for about 6\u00a0minutes, sprinkled with lovage from Keith&#8217;s Farm<\/li>\n<\/ul>\n<p>There was a small cheese course, which included a few sweet cherries from Samascott Orchards.<\/p>\n<ul>\n<li>three cheeses from <a href=\"http:\/\/www.considerbardwellfarm.com\/cheese.html\">Consider Bardwell Farm<\/a>: &#8216;Dorset&#8217;, a rich, buttery washed-rind\u00a0cow\u00a0milk cheese, and their 2 new-ish blues, \u2018Barden Blue\u2019, a cow cheese, and a goat blue which I believe has not yet been named [might I\u00a0humbly suggest &#8216;Wellen&#8217;, as in Bardwell&#8217;s &#8216;Barden&#8217;-&#8216;Wellen&#8217;?]<\/li>\n<li>a\u00a0terrific\u00a0Hudson Bakery pumpernickel boule from Citarella<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the wine was an Italian (Tuscany) white, <a href=\"http:\/\/www.antinori.it\/en\/26-generazioni\/villa-antinori-bianco-2014\">Villa Antinori Toscana 2014<\/a><\/li>\n<li>the music was a 1717 opera by <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=1256560\">Antonio Vivaldi, &#8216;L&#8217;incoronazione di Dario&#8217;,<\/a> in a performance by\u00a0Ottavio Dantone and the\u00a0Accademia Bizantina<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>The sea robin was delicious, but I think I overdid the garnish this time.
