It&#8217;s\u00a0<a href=\"http:\/\/www.foodandwine.com\/recipes\/grilled-mackerel-with-sicilian-caper-tomato-salsa\">Michael White\u2019s very simple Sicilian-inspired recipe<\/a>.\u00a0 I can usually\u00a0vary the tomatoes, depending on what may be\u00a0available, and sometimes at the very end I sprinkle\u00a0something on the top (last night, for the first time, a micro <em>bronze<\/em> fennel), but even more important is the freshness of the fish and my luck in getting the correct\u00a0flame and timing the cooking right.<\/p>\n<p>Tomatoes and eggplant too:\u00a0not endangered, not expensive, very good for you, and very delicious.<\/p>\n<p>I love grilling somewhat larger\u00a0eggplant, but\u00a0I always smile when I spot\u00a0&#8216;fairy tale&#8217; eggplant (a name I&#8217;ve usually shortened to &#8216;fairy eggplant&#8217;)\u00a0in the Greenmarket. They have the disadvantage of not lending themselves <a href=\"http:\/\/food.hoggardwagner.org\/2014\/10\/09\/roasted-squid-with-oregano-eggplant-with-basil\/\">to being scored<\/a>\u00a0before grilling,\u00a0but they have the advantage of not lending themselves to\u00a0being scored before grilling (scoring takes a little more time, but only a <em>little<\/em> more time). Both larger and smaller eggplant can be combined with another vegetable, and <a href=\"http:\/\/food.hoggardwagner.org\/2015\/08\/18\/herb-breaded-swordfish-grilled-eggplant-tomato\/\">tomato is a natural<\/a>, but I kept it simple this time.<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8875\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/heirloom_tomatoes.jpg\" alt=\"heirloom_tomatoes\" width=\"600\" height=\"450\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8876\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/fairytale_eggplant.jpg\" alt=\"fairy+tale_eggplant\" width=\"600\" height=\"450\" \/><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>four 3 to\u00a04-ounce Spanish mackerel fillets from Blue Moon Fish,\u00a0washed, dried, brushed with olive oil, seasoned with salt and pepper, pan grilled over high heat for 6 or 7 minutes, turning once (the skin side down first), removed and completed\u00a0with a salsa consisting of 1\/2-inch\u00a0diced\u00a0heirloom tomatoes from Norwich Meadows Farm tossed with olive oil, wild brined\u00a0capers which had been rinsed and drained, juice from small Limoneira lemon from Trader Joe\u2019s, salt, and pepper, and sprinkled with\u00a0\u2018micro bronze fennel\u2019\u00a0from Two Guys from Woodbridge<\/li>\n<li>several\u00a0handfuls of fairy tale eggplant from Stokes Farm,\u00a0sliced in half, tossed\u00a0with oil, chopped young\u00a0(juicy) garlic from Alewife\u00a0Farm, salt, pepper, fresh budding oregano from\u00a0Stokes Farm,\u00a0grilled on a large ribbed cast-iron pan and garnished with more of the oregano<\/li>\n<li>the wine was an Italian (Sicilian) white, <a href=\"http:\/\/www.jennyandfrancois.com\/wines\/italy\/bosco-falconeria\/\">Catarratto Bosco Falconieria<\/a> 2013, produced by <a href=\"http:\/\/www.boscofalconeria.it\/\">Bosco Falconeria<\/a>, from <a href=\"http:\/\/www.astorwines.com\/SearchResultsSingle.aspx?p=1&amp;search=28419&amp;searchtype=Contains\">Astor Wines<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=125114\">Antonio Vivaldi&#8217;s opera, &#8216;Tito Manlio&#8217;<\/a>, performed by\u00a0\u00a0the\u00a0Accademia Bizantina, directed by Ottavio Dantone<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Mackerel are not endangered, not expensive, very good for you, and very delicious.
