I should probably have used it as part of a composed dish, since these links were far more spicy (really hot!) than I expected of a brand marketed as broadly as <a href=\"https:\/\/www.nimanranch.com\/\">Niman Ranch<\/a> is. In addition, the dried chilis I tossed into the salsa which accompanied it, while ostensibly the same as a supply I had just exhausted, were <em>much<\/em> hotter.<\/p>\n<p>Fortunately,\u00a0the <em>beans<\/em> at least had no spiciness (only a real herbiness).\u00a0I also put\u00a0some <a href=\"https:\/\/pbs.twimg.com\/media\/CLfUfTgUwAA-7zJ.jpg\">rich moist black bread<\/a> on the table, and\u00a0both were helpful in\u00a0refreshing\u00a0taste buds somewhat dazed by the other 2 elements of the dinner,\u00a0enabling us to enjoy the\u00a0good wine.<\/p>\n<p>[Note: After the picture above was taken, the juices from each of the\u00a03 elements began to run toward the center. It was more than picturesque, it was a perfect\u00a0objective for the bread, which had now become even more useful.]<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8857\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/tomatillos.jpg\" alt=\"tomatillos\" width=\"450\" height=\"600\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8858\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/black_turtle_beans.jpg\" alt=\"black_turtle_beans\" width=\"450\" height=\"600\" \/><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>Four links of Niman Ranch chorizo sausage, pan grilled for a few minutes over a medium flame\u00a0until\u00a0heated through<\/li>\n<li>a tomatillo and tomato salsa composed of 3 chopped tomatillos from Alewife Farm and 2 chopped heirloom tomatoes (one red, one yellow)\u00a0from Norwich Meadows Farm, sliced\u00a0red scallions (including some of the green stems) from Paffenroth Gardens, some dried\u00a0<a href=\"http:\/\/www.sardissimo.com\/\">Itria-Sirissi<\/a>\u00a0chili (<em><a href=\"http:\/\/www.zafferanodisardegna.it\/peperoncino.htm#PEPERONCINO INTERO ITRIA\">peperoncino di Sardegna intero<\/a><\/em>), chopped garlic from Alewife Farm, sea salt, a pinch of vanilla bean-infused\u00a0turbinado sugar,\u00a0some juice of\u00a0a\u00a0small Limoniera lemon from Trader Joe\u2019s, and chopped parsley from Stokes Farm<\/li>\n<li>shelled Black Turtle beans from Norwich Meadows Farm (somewhere between fresh and dried, probably since they had been in the crisper for a while), washed, cleaned, added to a pot\u00a0in which sliced\u00a0red scallions from Paffenroth Gardens and\u00a0sliced garlic from Alewife Farm had been saut\u00e9ed in olive oil, water then added to cover, the mix slowly cooked\u00a0for 3 or 4 hours the night before, water added as needed, until the beans were done, and some pungent\u00a0dried Italian oregano from Buon Italia introduced\u00a0during the cooking process, after which they were refrigerated, reheated the following evening, gradually adding some good vegetable broth, made from a concentrate\u00a0manufactured by <a href=\"http:\/\/www.betterthanbouillon.com\/\">Better Than Bullion<\/a>, to thin the condensed sauce,\u00a0some chopped\u00a0oregano buds from Stokes Farm stirred in while it was heating, and more, not\u00a0chopped, used to garnish the beans<\/li>\n<li>the bread was an absolutely wonderful\u00a0<a href=\"http:\/\/www.royalbakersdist.com\/View\/Hudson-Bread-Pumpernickel-Boule-1lb-162607\">Hudson Bread pumpernickel boule<\/a> from <a href=\"https:\/\/www.citarella.com\/content\/citarella-village\/\">Citarella<\/a><\/li>\n<li>the wine was a California (Sonoma) red, <a href=\"https:\/\/us.nakedwines.com\/wines\/timothy-olson-syrah-dry-creek-valley-2013.ht\">The Cooper&#8217;s Art Timothy Olson Syrah<\/a> 2015 [the link is to an earlier vintage]<\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=73810\">Jean-Baptiste Lully&#8217;s &#8216;Armide&#8217;,\u00a0Philippe Herreweghe directing\u00a0La Chapelle Royale Paris, and the Collegium Vocale<\/a><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Spicy.
