{"id":8756,"date":"2016-07-21T19:46:24","date_gmt":"2016-07-21T19:46:24","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=8756"},"modified":"2016-07-21T19:46:24","modified_gmt":"2016-07-21T19:46:24","slug":"marinated-swordfish-micro-beet-tomato-mint-cauliflower","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=8756","title":{"rendered":"marinated swordfish, micro beet; tomato-mint cauliflower"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8758\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/swordfish_breaded_cauliflower_tomato.jpg\" alt=\"swordfish_breaded_cauliflower_tomato\" width=\"600\" height=\"450\" \/><\/p>\n<p>Neither of us has ever been to Sicily, but we often\u00a0visit the ancient island at dinner, both the food and the wine.<\/p>\n<p>I&#8217;m not sure whether it&#8217;s the very interesting choices of unfamiliar wines or the cosmopolitan Mediterranean food culture that is\u00a0the operative factor in arranging these meals,\u00a0but we try to include both together.<\/p>\n<p>For this one\u00a0I elaborated on a preparation for swordfish which I had used several times before. Even while\u00a0doing so however I was thinking that maybe I was going too far. I needn&#8217;t have worried, as\u00a0the dish\u00a0turned out very fine.<\/p>\n<p>I had copied <a href=\"http:\/\/italianfood.about.com\/od\/fishdishes\/ig\/La-Galleria-del-Pesce\/Swordfish-Steaks.htm\">the very simple recipe<\/a>\u00a0from <a href=\"https:\/\/dobianchi.com\/2013\/10\/21\/kyle-phillips-wine-blogger\/\">Kyle Phillips<\/a> a number of years ago; I hope he wouldn&#8217;t have minded the liberties I took.<\/p>\n<p>As for the cauliflower, I didn&#8217;t want to use the oven, so I turned to a recipe I had worked with before. I did make\u00a0some adjustments, both from\u00a0necessity and perversity. It too was a great success.<\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>one 12 or 13-ounce swordfish steak from Blue Moon Fish,\u00a0in the Union Square Greenmarket, carefully cut into 2 portions, marinated for about\u00a0half hour\u00a0in a mixture of olive oil, a very small amount of dried <em>Itria-Sirissi chili, peperoncino di Sardegna intero<\/em> from Buon Italia, fresh oregano buds and leaves from Stokes Farm, and some\u00a0finely-chopped red scallion from Paffenroth Gardens, after which it was\u00a0drained well and covered with a coating of dried homemade bread crumbs, then pan-grilled over medium-high heat for 4\u00a0to\u00a05 minutes on each side,\u00a0removed, seasoned with salt, sprinkled with a little organic lemon juice from Whole Foods, a pinch of <a href=\"http:\/\/www.thekitchn.com\/how-to-use-fennel-pollen-65434\">wild\u00a0fennel pollen<\/a> from Buon Italia, a little more red scallion, very finely sliced, sprinkled with micro beet greens from Two Guys from Woodbridge, and\u00a0drizzled with olive oil before serving<\/li>\n<li>flowerets of a ten-ounce white cauliflower from Sycamore Farms,\u00a0saut\u00e9ed in a pan in which fresh sliced organic garlic cloves from Whole Foods, some crushed dried Itria-Sirissi chili from Buon Italia, and more than a teaspoon of fennel seeds had been heated, the mix braised for a few minutes, eventually joined by 5 ounces of Maine cherry \u2018cocktail\u2019 tomatoes from Whole Foods, halved and seeded, and finished by stirring in sprigs and leaves of\u00a0fresh spearmint\u00a0from Lani\u2019s Farm [I forgot to add the tomatoes until almost the very end, but I think I prefer the result over the suggestion in the original recipe, which appears <a href=\"http:\/\/www.seriouseats.com\/recipes\/2010\/03\/cauliflower-with-fennel-seeds-recipe.html\">here<\/a>]<\/li>\n<li>the wine was an awesome\u00a0Italian (Sicily) white, <a href=\"http:\/\/www.feudomontoni.it\/vini\/en\/wines\/vigna-del-masso-catarratto\/\">Feudo Montoni del Principato di Villanova Catarratto del Masso 2015<\/a>\u00a0[the link is to the 2104 vintage], from a sale of Sicilian wines at\u00a0<a href=\"http:\/\/www.astorwines.com\/\">Astor Wines<\/a><\/li>\n<li>the music was\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=706386\">Jean-Philippe Rameau&#8217;s &#8216;Hippolyte Et Aricie&#8217;, performed by William\u00a0Christie and Les Arts Florissants<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Neither of us has ever been to Sicily, but we often\u00a0visit the ancient island at dinner, both the food and the wine.
