At least <a href=\"http:\/\/food.hoggardwagner.org\/2015\/03\/25\/croxetti-with-pancetta-shallots-pea-sprouts-lemon\/\">as I&#8217;ve prepared it in the past<\/a>, it has, unaccountably, always suggested to me a certain lightness, which was also what I was looking for that night.<\/p>\n<p>The sauce ingredients included some Colameco\u2019s pancetta, very fresh red scallions, an organic lemon, good olive oil, a package of purple micro basil, and an excellent Parmesan cheese.<\/p>\n<p>It was mostly about assembly.<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8753\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/red_scallions.jpg\" alt=\"red_scallions\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>the process involved\u00a0about 10 ounces of a package of Genovese Alta Valle Scrivia Croxetti from Eataly, followed the basic outline of this\u00a0<a href=\"http:\/\/www.epicurious.com\/recipes\/member\/views\/spring-pea-shoots-pasta-and-pancetta-52785821\">simple Epicurious recipe<\/a>\u00a0(although with some alternative ingredients, cooking\u00a0everything for a much shorter time, and simply draining\u00a0the pasta as I normally do); the other elements, and their sources, were\u00a0a 4-ounce package of Colameco\u2019s uncured diced Pancetta from Whole Foods,\u00a0red spring scallions from Hawthorne Valley Farm, juice from an\u00a0organic lemon\u00a0form Whole Foods,\u00a0micro basil from Two Guys from Woodbridge, and Parmesan cheese from Buon Italia<\/li>\n<li>the wine was an Italian (Tuscany) ros\u00e9, <a href=\"http:\/\/www.la-spinetta.com\/pdf%20wine%20tuscany\/Il%20Rose%20di%20Casanova%202015%20Inglese.pdf\">Il Ros\u00e9 di Casanova La Spinetta 2015<\/a><\/li>\n<li>the music was Q2 streaming, very mellow, all evening<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Looking for an unfamiliar pasta to accompany a few special ingredients, I remembered I had a package of croxetti in the larder.
