Usually dominated by tomatoes of some kind, it&#8217;s always a (varying) m\u00e9lange of bits of herbs and spices, often including a bit of some kind of allium.<\/p>\n<p>The crab and the salsa is always accompanied by a vegetable, which, depending upon what I have, can really\u00a0brighten\u00a0up a\u00a0color palate which would already be doing some showing off.<\/p>\n<p>In this case there was a lagniappe, one small heirloom tomato, originally intended to be part of\u00a0the salsa (along with another of its own kind, a Striped German, and a few\u00a0cherry tomatoes). Last night it\u00a0was still a very light yellow, but it had been sitting at\u00a0the window for days, just\u00a0as long as its companion, from the same farm, so I just assumed it too would be ripe by now. \u00a0Not paying attention, I started slicing it before I noticed\u00a0that it was <em>very\u00a0<\/em>firm, and that it had almost no taste. I decided a little heat might\u00a0be just what it needed,\u00a0and it was: I ended up with\u00a0a luscious side dish of &#8216;fried yellow tomato&#8217;, and wished\u00a0there had\u00a0been more of its sort.<\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>two terrific crab cakes from PE &amp; DD Seafood (the ingredients are crab, egg, flour, red &amp; green peppers, garlic, salt, pepper, breadcrumbs, mayonnaise, milk, celery, and parsley), heated in a heavy copper\u00a0pan, 3\u00a0to 4\u00a0minutes to each side,\u00a0served with\u00a0some dressed arugula\u00a0from Hawthorne Valley Farm, which had been\u00a0partially covered by\u00a0a salsa\u00a0composed of one Striped German heirloom tomato from Central Valley Farm\u00a0and a few Maine \u2018cocktail tomatoes\u2019 from Whole Foods, all\u00a0chopped, salt, freshly-ground black pepper, a bit of homemade French Basque\u00a0<em><a href=\"https:\/\/en.wikipedia.org\/wiki\/Espelette_pepper\">piment d\u2019Espellate<\/a><\/em>, some\u00a0dried <em>Itria-Sirissi chili, peperoncino di Sardegna intero<\/em> from Buon Italia, scissored garlic chives from Lani&#8217;s\u00a0Farm, and, once plated, drizzled on top with the very small amount of juices left at the bottom of the bowl of salsa, the whole assemblage then sprinkled with micro basil from Two Guys from Woodbridge<\/li>\n<li><a href=\"https:\/\/sowtrueseed.com\/product\/maxibel-haricot-vert-organic\/\">Maxibel <em>Haricots Verts<\/em><\/a>, from Norwich Meadows Farm, blanched, drained and dried, reheated in oil, finished with salt, pepper, and stemmed and chopped flowering chervil from\u00a0Willow Wisp Farm<\/li>\n<li>one small unripe heirloom tomato from Central Valley Farm, cut into small pieces, saut\u00e9ed in olive oil in a small copper pan until the edges were beginning to\u00a0brown, seasoned with sea salt, freshly-ground Tellicherry pepper, and a pinch of Turbonado sugar, sprinkled with a small amount of several chopped fresh herbs that had been briefly hanging out in the refrigerator<\/li>\n<li>the wine was a California (Lodi) ros\u00e9,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/karen-birmingham-rose-lodi-2015.htm\">Karen Birmingham Ros\u00e9 Lodi 2015<\/a><\/li>\n<li>the music was Antonio\u00a0Vivaldi&#8217;s first (of 94) opera, the\u00a01713 <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=537972\">&#8216;<em>Ottone In Villa&#8217;<\/em>, performed by\u00a0Giovanni Antonini, conducting\u00a0<em>Il Giardino Armonico<\/em><\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>The salsa I\u00a0have often\u00a0prepared as a &#8216;bed&#8217; for these wonderful crab cakes from the Union Square Greenmarket has no\u00a0formula.
