I had a good supply of fresh\u00a0eggs, more than enough\u00a0garlic scapes, lots of tomatoes, but the\u00a0trigger was a\u00a0sighting of fresh blossoming <a href=\"https:\/\/en.wikipedia.org\/wiki\/Chervil\">chervil<\/a> in one of the stalls in the Union Square Greenmarket that day. I&#8217;m always on the lookout for something new, and while this particular very ancient herb\u00a0was known to me, I don&#8217;t think I&#8217;ve ever seen it in a\u00a0market, and I know I haven&#8217;t used it in the kitchen.<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8679\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/chervil_blossoming-1.jpg\" alt=\"chervil_blossoming\" width=\"600\" height=\"450\" \/><\/p>\n<p>I was sure it would be a good companion for the mix in this frittata, and I used it in both the egg mixture and as a dusting on top of it after it left the broiler.<\/p>\n<p>The other ingredients were few: about 6 or 8 ounces\u00a0of garlic scapes (no other garlic form was used); 2 kinds of tomatoes, &#8216;The Best Tomatoes&#8217; from Stokes Farm, within the egg mix itself, and half a dozen\u00a0Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods, sliced and placed on the top after the egg had partially cooked; there was also sea salt and freshly-ground Tellicherry pepper, and a couple tablespoons of milk.<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8677\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/scapes.jpg\" alt=\"scapes\" width=\"450\" height=\"600\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8678\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/best_tomatoes.jpg\" alt=\"best_tomatoes\" width=\"450\" height=\"600\" \/><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>a few ounces of garlic scapes from from\u00a0Willow Wisp Farm, cut into 1 or 2-inch sections, saut\u00e9ed in olive oil in a 10&#8243;\u00a0cast\u00a0iron pot until softened, removed, allowed to cool, then added\u00a0to a bowl in which\u00a08 eggs\u00a0from Millport Dairy had been whipped\u00a0before\u00a0half a pound or so of small halved cherry tomatoes from Stokes Farm were added, the mix seasoned with salt and pepper and the scapes introduced\u00a0along with a generous amount o stemmed and chopped flowering chervil\u00a0from Willow Wisp Farm, the egg mixture poured into\u00a0the pan in which the scapes had been prepared,\u00a0then\u00a0cooked slowly over a low-to-moderate flame until the eggs were almost done, Maine cherry \u2018cocktail\u2019 tomatoes from Whole Foods, each sliced into four disks,\u00a0arranged\u00a0on the top of the mixture, which was\u00a0placed in a pre-heated broiler\u00a0and\u00a0finished with more of the chervil, served on a edge of several leaves of radicchio from from\u00a0Hawthorne Valley Farm, dressed with a good Campania olive oil, salt, pepper, and a mixture of chopped lovage from Keith&#8217;s Farm and parsley from Stokes Farm<\/li>\n<li>the wine was a French (Burgundy) sparkling,\u00a0<a href=\"http:\/\/www.chelseawinevault.com\/jcb-jean-charles-boisset-cremant-de-bourgogne-brut-n-21-nv\">JCB by Jean-Charles Boisset Brut N\u00b0 21 Cr\u00e9mant de Bourgogne NV<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.operanews.com\/Opera_News_Magazine\/2016\/3\/Recordings\/RAMEAU__Za%C3%AFs.html\">Rameau&#8217;s\u00a0Za\u00efs, with\u00a0Christophe Rousset\u2019s <em>Les Talens Lyriques<\/em><\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>The frittata was improvised.
