{"id":8522,"date":"2016-07-03T18:01:43","date_gmt":"2016-07-03T18:01:43","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=8522"},"modified":"2016-07-03T18:01:43","modified_gmt":"2016-07-03T18:01:43","slug":"duck-radish-sprouts-cauliflower-tomato-fairy-eggplant","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=8522","title":{"rendered":"duck, radish sprouts; cauliflower, tomato; fairy eggplant"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8524\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/duck_breast_cauliflower_fairy_eggplant.jpg\" alt=\"duck_breast_cauliflower_fairy_eggplant\" width=\"600\" height=\"450\" \/><\/p>\n<p>Once again I was afraid that I might have bought more vegetables and herbs at the Greenmarket than I was likely to use, at least without a well-planned campaign for the weekend.<\/p>\n<p>I made a plan, and it&#8217;s working.<\/p>\n<p>Last night I managed to include some or all of 4\u00a0of them in one meal.<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8531\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/cauliflower_green2.jpg\" alt=\"cauliflower_green2\" width=\"600\" height=\"450\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8534\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/07\/eggplant_fairy_2-1.jpg\" alt=\"eggplant_fairy_2\" width=\"600\" height=\"450\" \/><\/p>\n<p>Fortunately the small amount of each vegetable, added to\u00a0the modest\u00a0size of the duck breast, made\u00a0it possible.<\/p>\n<ul>\n<li>one 12-ounce Pat LaFrieda boneless duck breast from Eataly, the\u00a0fatty side scored by a very sharp knife with cross-hatching, then sprinkled\u00a0with a mixture of sea salt, \u2018<a href=\"http:\/\/www.chowhound.com\/post\/question-penzeys-black-peppercorns-786715\">India Special Extra Bold\u2019 Tellicherry peppercorns<\/a>, and a bit of turbinado sugar (infused over time with a vanilla bean), the duck\u00a0left standing for much of\u00a0an hour before it was pan-fried over medium heat\u00a0with a very small amount of duck fat remaining from\u00a0an earlier meal, removed when medium rare (cutting it into the two portions\u00a0at that time to be certain), finished with a drizzle of organic lemon, sprinkled with purple micro radish sprouts from Windfall Farms,\u00a0and dressed with a bit of Campania olive oil<\/li>\n<li>two small heads of green cauliflower\u00a0from Norwich Meadows Farm, separated into florets\u00a0, saut\u00e9ed in olive oil which had heated slices of fresh garlic from Stokes Farm, a little crushed\u00a0dried\u00a0<a href=\"http:\/\/www.sardissimo.com\/\">Itria-Sirissi<\/a>\u00a0chili\u00a0from Buon Italia, garlic, a little crushed dried fennel and coriander seed, then braised with 4\u00a0small halved Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods, their juices first removed, and finished with torn\u00a0calamint from Berrid Treasures<\/li>\n<li>tiny fairy eggplants\u00a0from Norwich Meadows Farm, sliced in half, tossed\u00a0with oil, chopped fresh garlic from Stokes Farm, salt, pepper, chopped\u00a0lovage from from Tamarack Hollow Farm\u00a0and chopped basil from Campo Rosso Farm, quickly grilled on a ribbed cast-iron pan<\/li>\n<li>the wine was a fantastic treat, a California (Napa) red,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/scott-peterson-s-p-drummer-red-blend-2014.htm\">Scott Peterson S.P.
