Seafood, purchased at the Union Square Greenmarket, and a <a href=\"http:\/\/dinersjournal.blogs.nytimes.com\/2008\/12\/10\/recipe-of-the-day-ligurian-fish-and-potatoes\/\">recipe<\/a> from <a href=\"http:\/\/markbittman.com\/\">Mark Bittman<\/a> I found in 2004:\u00a0\u00a0 lay the cod on a bed of coarse salt and completely cover it with more salt, setting it aside; \u00a0then slice potatoes to a thickness of less than 1\/4 inch (I used Keuka, from Maxwell&#8217;s Farm in the\u00a0Greenmarket) and toss them in a baking pan with a generous amount of oil; \u00a0 cook for 20-30 minutes or so in a 400 degree oven until tender, then thoroughly rinse and dry the cod, place it in the pan on top of the potatoes, drizzle with a little oil and sprinkle with ground pepper, and return the pan to the oven; the fish should be done in 8 to 12 minutes, depending on thickness, and then garnish all with chopped parsley (I used lovage from Maxwell&#8217;s Farm)]; \u00a0accompanied with\u00a0kale, also from Maxwell&#8217;s, sauteed in oil with garlic<\/li>\n<li>wine: Spanish Rueda,\u00a0<a href=\"http:\/\/swirlandsavor.blogspot.com\/2009\/08\/wine-of-moment-bodegas-y-vinedos-shaya.html\">Shaya 2008 Verdejo old vines<\/a> from <a href=\"http:\/\/www.67wine.com\/index.asp\">67 Wine<\/a><\/li>\n<li><a href=\"http:\/\/www.67wine.com\/index.asp\"><\/a>strawberry compote using Tahitian Vanilla <a href=\"http:\/\/www.ciaobellagelato.com\/\">Ciao Bello<\/a> gelato, and a sauce of berries macerated a bit with with\u00a0<a href=\"http:\/\/www.capriflavors.com\/index.php?main_page=product_info&amp;cPath=1&amp;products_id=1593&amp;zenid=0fa0a1fdceefabc7f9e173668e79b855\">Toschi Orzata Orgeat<\/a> syrup mixed with\u00a0<a href=\"http:\/\/en.wikipedia.org\/wiki\/Turbinado_sugar\">turbinado sugar<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>&#8220;Ligurian fish and potatoes&#8221; [using a beautiful cod fillet, from Riverhead&#8217;s P.E. &amp; D.D.
