{"id":8429,"date":"2016-06-26T18:37:03","date_gmt":"2016-06-26T18:37:03","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=8429"},"modified":"2016-06-26T18:37:03","modified_gmt":"2016-06-26T18:37:03","slug":"speck-wild-cress-grilled-spicy-salmon-flat-beans-tomato","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=8429","title":{"rendered":"speck, wild cress; grilled spicy salmon; flat beans; tomato"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8433\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/06\/Speck_wild_cress.jpg\" alt=\"Speck_wild_cress\" width=\"600\" height=\"450\" \/><\/p>\n<p>It was a warm evening.<\/p>\n<p>The first course never got anywhere near a stove.<\/p>\n<p>I was very fortunate in the greens I had been able to bring\u00a0home from\u00a0Union Square on Friday:\u00a0They were a perfect, spicy foil to the headiness of the smoky pork.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8435\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/06\/cress_flowering_wild2-1.jpg\" alt=\"cress_flowering_wild2\" width=\"450\" height=\"600\" \/><\/p>\n<p>None of the elements of the second course spent more than a few minutes on the top of the range.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8434\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/06\/salmon_pole_beans_tomato.jpg\" alt=\"salmon_pole_beans_tomato\" width=\"600\" height=\"450\" \/><\/p>\n<p>I had constructed\u00a0the meal around the second course, a beautiful piece of fresh wild salmon that I was determined to cook\u00a0without using\u00a0the oven, and the rest\u00a0of the meal had to go with\u00a0the same proviso. Fortunately there were no taste sacrifices\u00a0anywhere along the line.<\/p>\n<ul>\n<li>thinly-sliced <em>Alto Adige Speck<\/em> from Eataly, each piece rolled around the tines of a fork\u00a0and put on a plate, drizzled with some very good olive oil from Campania, accompanied by a handful of\u00a0semi-wild flowering cress from Lucky Dog Organic Farm dressed with the same oil,\u00a0a little white balsamic vinegar, salt, and pepper<\/li>\n<li>slices of a\u00a0She Wolf Bakery sourdough baguette<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the salmon was\u00a0prepared in a manner slightly modified from this\u00a0<a href=\"http:\/\/cooking.nytimes.com\/recipes\/1016707-brown-sugar-cured-salmon\">interesting Melissa Clark recipe<\/a>, using\u00a0one fresh wild 14-ounce sockeye salmon fillet from Whole Foods, marinated in the refrigerator in a covered dish for about 4 hours while coated on both sides\u00a0with\u00a0a mix of light brown turbinado sugar, sea salt, freshly ground tellicherry pepper, freshly ground allspice, freshly ground nutmeg, and the zest of half of an organic lemon from Whole Foods, after which the fish was rinsed,\u00a0patted dry, brought to room temperature,\u00a0oiled generously, and cooked on an enameled grill pan, flesh side down, removed, dusted with dried\u00a0<a href=\"http:\/\/www.pollenranch.com\/dill-pollen\/\">Pollen Ranch Dill Pollen<\/a>, sprinkled with chopped fresh dill from from Bodhitree Farm, drizzled with olive oil and served with lemon wedges, organic, from Whole Foods<\/li>\n<li>two\u00a0Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods, sliced, mixed with olive oil, salt, pepper, and chopped basil from Tamarack Hollow Farm<\/li>\n<li>flat green pole beans from Norwich Meadows Farm, blanched, drained and dried, then reheated in oil, mixed with chopped red-tinged Japanese scallions from Norwich Meadows Farm, and finished with salt, pepper, and\u00a0chopped lovage from Bodhitree Farm<\/li>\n<\/ul>\n<p>There were cherries,\u00a0from Kernan Farms.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8444\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/06\/cherries_blue_bowl.jpg\" alt=\"cherries_blue_bowl\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>the wine was a California (Lodi) ros\u00e9,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/karen-birmingham-rose-lodi-2015.htm\">Karen Birmingham Ros\u00e9 Lodi 2015<\/a><\/li>\n<li>the music was\u00a0Q2 Music, streaming<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>It was a warm evening.
