posted on the board of Paul&#8217;s stand in the Greenmarket I immediately knew what\u00a0we were\u00a0going to have for dinner.\u00a0\u00a0When it came to my turn in line, I stepped right up and asked for &#8216;Dolphin&#8217;. \u00a0Paul registered a little mock horror, since there were probably people within earshot of my voice, and even today many\u00a0associate the word, &#8216;dolphin&#8217; with\u00a0Flipper.<\/p>\n<p>I had <a href=\"http:\/\/food.hoggardwagner.org\/?s=dolphin+\">already come to appreciate the flavor<\/a> of this fish, and last night it was pretty extraordinary, with flavors and textures far more complex than I had reason to expect, and yet still retaining the character of the fish itself. \u00a0To the skeptical: \u00a0No, all white-flesh fish do not taste the same.<\/p>\n<p>Also, and not at all incidentally, the Greenmarket vegetables were totally up to the challenge of accompanying a good fish.<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8355\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/06\/Royal_snow_peas.jpg\" alt=\"Royal_snow_peas\" width=\"600\" height=\"450\" \/><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>one Dolphin fillet, about 13 ounces, from Pura Vida Fisheries,\u00a0dry-marinated with more than half a tablespoon of organic lemon zest, an equal amount of chopped thyme leaves from Bodhitree Farm, salt, and pepper, set aside for 20\u00a0minutes or so, after which it was\u00a0seared in a hot copper fish pan for about 3 minutes, skin side up, then\u00a0turned over and that side seared for the same length of time, the heat lowered and the pan loosely covered for a very few minutes with aluminum foil, during which time some thin<em>-ish<\/em> slices of stems one stem of\u00a0a\u00a0young red onion from Bodhitree Farm were introduced and briefly saut\u00e9ed with the fish\u00a0before it itself was divided into 2 pieces, removed and put onto plates, alliums and pan juices poured over the top<\/li>\n<li>small organic Butterball potatoes from Norwich Meadows Farm boiled in salted water until just tender,\u00a0drained,\u00a0halved,\u00a0dried in the pan,\u00a0rolled in olive oil, seasoned with salt and pepper, some chopped lovage added before they were served (I added more after taking the picture above)<\/li>\n<li>small \u2018Royal Snow Peas&#8217; from Alewife Farm, the stems removed, saut\u00e9ed in olive oil, seasoned with salt and pepper, sprinkled with chopped summer savory from Stokes Farm<\/li>\n<li>the wine was an Oregon (Willamette) white, <a href=\"http:\/\/www.montinore.com\/?method=products.productDrilldown&amp;productID=d678f900-0bf6-073e-202e-b7e6b229b994&amp;originalMarketingURL=product\/2015-Pinot-Gris\">Montinore Estate Pinot Gris 2015<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.wqxr.org\/#!\/series\/q2\/\">Q2 Music, streaming<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>When I saw &#8216;Mahi-mahi&#8216;
