I had bought some fresh summer savory the day before and I was perfectly willing to leave it at that, as an excellent artisanal pasta dressed with oil, good dried pepper, and that pungent seasonal herb.<\/p>\n<p>I hadn&#8217;t expected there might be some tuna left over from the meal the night before, but the coincidence was responsible for an inspired\u00a0(well, more like serendipitous) entr\u00e9e. \u00a0The fish was not fully cooked in the center, so, in order to preserve and appreciate\u00a0its delicate freshness, I sliced the little 2-ounce chunk of fillet very thinly and added it to the zito\u00a0only after the sauced pasta\u00a0had been divided into the 2 bowls.<\/p>\n<ul>\n<li>ten ounces of Afeltra <em>Zito Corto Rigato,<\/em><em>\u00a0<\/em>cooked <em>al dente<\/em>, drained and tossed into a heavy pan in which one sliced\/chopped\u00a0young red onion from Bodhitree Farm had been saut\u00e9ed in a little olive oil until softened, a teaspoon or so of dried <em>Itria-Sirissi<\/em> chilis, <em>peperoncino di Sardegna intero<\/em> from Buon Italia stirred in, then, the pasta still in the pan, some\u00a0of its\u00a0cooking water added and stirred until\u00a0emulsified, finally\u00a0some chopped\u00a0summer savory from Stokes Farm mixed in and the pasta\u00a0transferred to\u00a02 bowls, where it was scattered with thinly-sliced pieces of pan-grilled tuna remaining\u00a0from <a href=\"http:\/\/food.hoggardwagner.org\/2016\/06\/16\/speck-wild-arugula-fennelchili-grilled-tuna-kale-cherries\/\">a meal prepared the night before<\/a>, and a little olive oil poured over the top<\/li>\n<li>the wine was a Spanish (Rioja) white, <a href=\"http:\/\/www.sierracantabria.com\/prensa\/vendimia-2015-en-rioja\/\">Sierra Cantabria 2015<\/a><\/li>\n<li>the music was Yle streaming<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I was ready for a very simple pasta dish.
