Not quite <em>echt<\/em> German, what I put together was\u00a0more like\u00a0&#8216;creative German&#8217;.<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8322\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/06\/young_red_onions.jpg\" alt=\"young_red_onions\" width=\"600\" height=\"450\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8323\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/06\/Red_Amaranth.jpg\" alt=\"Red_Amaranth\" width=\"600\" height=\"450\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8324\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/06\/purple_top_turnips.jpg\" alt=\"purple_top_turnips\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>one young, or\u00a0spring, red onion from Bodhitree Farm, white portion only (some of the better\u00a0green leaves reserved), chopped and swirled around for a minute in a small amount of equal parts of\u00a0bacon fat, duck fat, and butter which had been heated inside an\u00a0oval\u00a0copper <em>au gratin <\/em>before adding\u00a0<em>2<\/em>\u00a0smoked loin pork chops [\u2018<a href=\"https:\/\/en.wikipedia.org\/wiki\/Kassler\">Kassler<\/a>\u2018], from the Amish family farm in Pennsylvania which\u00a0offers excellent produce at the Union Square Greenmarket\u00a0under\u00a0the name\u00a0<a href=\"http:\/\/food.hoggardwagner.org\/2015\/01\/23\/geraucherte-schweinshaxe-sauerkraut-kartoffeln\/\">Millport Dairy<\/a>,\u00a0a Pyrex glass cover added immediately, the chops\u00a0kept above a very low flame\u00a0(just enough to warm them, as they were\u00a0already fully-cooked), turning the meat once, and, near the end of the cooking time, the green parts of the onion\u00a0set aside earlier added and stirred about, the pork removed, plated, brushed\u00a0with a horseradish\u00a0jelly from <a href=\"http:\/\/www.berkshireberries.com\/\">Berkshire Berries<\/a>, the pork then sprinkled\u00a0with both the white and green onion\u00a0segments<\/li>\n<li>two handfuls of\u00a0washed\u00a0red amaranth from Bodhitree Farm, wilted in a little olive oil in which 6 tiny organic garlic cloves from Trader Joe&#8217;s had slowly cooked until they were beginning to brown<\/li>\n<li>small purple-top\u00a0turnips from Norwich Meadows Farm, cooked along the lines of <a href=\"http:\/\/www.thekitchn.com\/find-sweet-love-with-baby-turnips-220991\">this simple and delicious recipe<\/a>, using local honey (the extraordinarily rich\u00a0<a href=\"http:\/\/www.applestatehilltopfamilyfarm.com\/\">Apple State Hilltop Family Farm<\/a> pure <a href=\"http:\/\/applestatehilltopfamilyfarm.com\/store\/gifts-and-honey\/buckwheat-honey\/\">buckwheat\u00a0honey<\/a>) and\u00a0dill from\u00a0Bodhitree Farm rather than the chives specified in the recipe<\/li>\n<li>the wine was a German (Mosel) white,\u00a0Urban Riesling 2011\u00a0from\u00a0<a href=\"http:\/\/www.urbans-hof.de\/cms\/start-1001.html\">das Weingut St. Urbans-Hof<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=2148631\">Phillip\u00a0Glass, &#8216;In the Summer House&#8217; and\u00a0&#8216;Mad Rush&#8217;, and Nico\u00a0Muhly, &#8216;4 Studies&#8217; and\u00a0&#8216;Honest Music&#8217;\u00a0<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>We were back from Germany but a day or two, and I was\u00a0already homesick for a German meal.
