It\u00a0also looked pretty good. The hardest part of assembling this one-dish meal was deciding which pan (that is, mostly, which <em>size <\/em>pan)\u00a0I was going to use. \u00a0I ended up with\u00a0a seasoned thick 11&#8243; steel skillet, 1 3\/4&#8243; deep, and it turned out to be just right\u00a0for\u00a0the quantity of the ingredients and the\u00a0amount\u00a0of heat I wanted to work with.<\/p>\n<ul>\n<li>those\u00a0ingredients included, not necessarily in the order in which they were placed in the pan, a couple tablespoons of olive oil; a few chopped ramps from Lucky Dog Organic Farm; 4 or 5 chopped spring shallots from Lani&#8217;s Farm; a generous amount of arugulion\u00a0(a natural wild arugula and dandelion hybrid) from Berried Treasures; 7 Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods; 6 eggs form Millport Dairy; a tablespoon of chopped lovage from Berried Treasures; sea salt; freshly-ground tellicherry pepper; a little Basque <em>Piment d\u2019Espelette<\/em> which I had purchased from the French maker&#8217;s daughter at La Ferme Basque, Charlevoix, Quebec;\u00a0and a nice explosion of radish micro greens from Two Guys From Woodbridge<\/li>\n<li>the wine was a New Mexico (Sierra County) sparkling white,\u00a0<a href=\"http:\/\/www.chelseawinevault.com\/other-types\/champagne-sparkling\/domaine-saint-vincent-methode-champenoise-brut-new-mexico-nv\">Domaine Saint-Vincent M\u00e9thode Champenoise Brut New Mexico NV<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=188153#details\">four symphonies of\u00a0C.P.E.
