{"id":8213,"date":"2016-05-16T01:40:40","date_gmt":"2016-05-16T01:40:40","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=8213"},"modified":"2016-05-16T01:40:40","modified_gmt":"2016-05-16T01:40:40","slug":"steak-radish-micro-greens-roasted-sunchokes-asparagus","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=8213","title":{"rendered":"steak, radish micro greens; roasted sunchokes; asparagus"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8214\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/05\/steak_sunchokes_asparagus.jpg\" alt=\"steak_sunchokes_asparagus\" width=\"600\" height=\"450\" \/><\/p>\n<p>I first walked into\u00a0<a href=\"http:\/\/the-meathook.com\/\">The Meat Hook<\/a>\u00a0in 2009, soon after they had opened on Frost Street. \u00a0The gradual dispersion of the Williamsburg gallery scene in the years after that meant that we soon lost contact with these\u00a0excellent suppliers, but\u00a0last Sunday we\u00a0headed over to\u00a0their new shop\u00a0after a visit to &#8216;<a href=\"http:\/\/www.pierogi2000.com\/2016\/04\/seven-at-the-boiler-presents-seven-ish-seriously-funny\/\">SEVEN-ish, Seriously Funny<\/a>&#8216;, installed\u00a0by\u00a0&#8216;Seven at The Boiler&#8217; through May 22.<\/p>\n<p>We picked up 2 beautiful <a href=\"https:\/\/en.wikipedia.org\/wiki\/Flat_iron_steak\">flatiron steaks<\/a> and a\u00a0pound of excellent <a href=\"http:\/\/www.tastingtable.com\/cook\/national\/best-pork-cuts-affordable-pork-meat-cuts-how-to-cook-pork\">pork <em>secreto<\/em><\/a>. We\u00a0<a href=\"http:\/\/food.hoggardwagner.org\/?s=secreto\">enjoyed the pork that night<\/a>, and\u00a0froze the beef, which\u00a0they had vacuum sealed for us, for another day.<\/p>\n<p>Last night, on one of the 5\u00a0personal\u00a0anniversaries we share, we treated ourselves to the steaks.<\/p>\n<ul>\n<li>2 flatiron steaks (totaling\u00a0just under 14 ounces)\u00a0from the Meat Hook, defrosted in the refrigerator, brought to room temperature, dried, pan-grilled to rare-to-medium rare, drizzled with some local Lisbon lemon from Fantastic Gardens of Long Island (this was the very last of\u00a0David\u2019s citrus), sprinkled with radish micro greens from Two Guys From Woodbridge,\u00a0and drizzled with a little good olive oil<\/li>\n<li>sunchokes (12 ounces) from Lucky Dog Organic Farm, small &#8216;rootlings&#8217; removed, trimmed, scrubbed, sliced very thinly (1\/8 inch, but they\u00a0probaly didn&#8217;t have to be <em>that<\/em> thin), tossed with barely a tablespoon of olive oil, sea salt, and freshly-ground Telicherry pepper, spread in one layer onto 2\u00a0<a href=\"https:\/\/www.pamperedchef.com\/shop\/Stoneware\/Large+Bar+Pan\/1445\">Pampered Chef unglazed ceramic pan<\/a>s (a single pan wasn&#8217;t enough, since they had been cut so thinly\u00a0and\u00a0needed a lot of surface), roasted at 425\u00ba for about 35 minutes, or until they were brown, tender, and crispy on the edges, dusted\u00a0with\u00a0<a href=\"http:\/\/www.thekitchn.com\/how-to-use-fennel-pollen-65434\">dried fennel pollen<\/a> from Buon Italia, and shuffled around in the pans with a wooden spatula<\/li>\n<li>a dozen spears of asparagus from Lucky Dog Organic Farm,\u00a0trimmed and peeled, rolled in about a tablespoon of olive oil, and a little sea salt, roasted at 425-450\u00ba for about 15 to 20 minutes, served exactly as they were, unadorned, in all their freshness and goodness<\/li>\n<li>the wine was \u00a0a California (Sonoma) red,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/rox-scott-peterson-all-blacks--sonoma-county-2013.htm\">ROX Scott Peterson All Blacks Sonoma County 2013<\/a>\u00a0from <a href=\"https:\/\/us.nakedwines.com\/\">Naked Wines<\/a><\/li>\n<li>the music was &#8216;Glass Piece (for Annea Lockwood)&#8217;, by\u00a0Steven M.
