It was improvised, and\u00a0almost anyone could have put it together. There was however, one exceptional ingredient, and it made\u00a0the dish itself exceptional.<\/p>\n<p>I was in Chelsea Market yesterday,\u00a0browsing the platforms and shelves of\u00a0<a href=\"http:\/\/www.buonitalia.com\/\">Buon Italia<\/a>, one of my favorite food shops anywhere.\u00a0Counterintuitively, inside this emporium of Italian cookery I had\u00a0actually been looking, with\u00a0no\u00a0success, for mace, preferably\u00a0whole blade mace (it sounds like I know what I&#8217;m talking about, but that&#8217;s not altogether true).<\/p>\n<p>Then I spotted<em> it<\/em>. The small plastic container was one of about a dozen arranged on a shelf some distance from all of the other dry herbs and spices, and the label read, in part, &#8220;Organic Wild Fennel Flowers&#8221;. I live in Manhattan, which would seem to make it as\u00a0likely as also impossible to come across it; in any event, I\u00a0had never expected to be able include this almost legendary ingredient in my modest home larder.<\/p>\n<p>It was pretty\u00a0pricey, but I bought one.<\/p>\n<p>I think it&#8217;s going to change my life.<\/p>\n<p>But first of all, I want to correct the misconception that this very precious herb can be described as fennel <em>flowers. <\/em>What I brought home, in spite of the print\u00a0on the label, is<em>\u00a0<\/em><a href=\"http:\/\/www.thekitchn.com\/how-to-use-fennel-pollen-65434\">fennel\u00a0<em>pollen<\/em><\/a>, hand-collected in Italy from common wild fennel. \u00a0Second, I&#8217;m putting myself on notice right now, in the range of\u00a0anyone able to read\u00a0this post, that I will resist the temptation going forward of incorporating a pinch in every dish I put together.<\/p>\n<blockquote>\n<ul>\n<li>eight ounces of Afeltra spaghetti chitarra, cooked <em>al dente<\/em>, mixed with a quickly-prepared sauce composed of\u00a0a little olive oil, 3 bruised garlic cloves from Trader Joe&#8217;s, one whole\u00a0dried\u00a0<a href=\"http:\/\/www.sardissimo.com\/\">Itria-Sirissi<\/a>\u00a0chili,\u00a0<em><a href=\"http:\/\/www.zafferanodisardegna.it\/peperoncino.htm#PEPERONCINO INTERO ITRIA\">peperoncino di Sardegna intero<\/a><\/em>\u00a0from Buon Italia, 4 or 5 ramps from Lucky Dog Organic Farm (the roughly-chopped bulbs tossed in first, the leaves, sliced lengthwise, following later), 8 halved\u00a0Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods, chopped fresh\u00a0peppermint from Lani\u2019s Farm, and a pinch or two\u00a0of\u00a0dry organic wild fennel pollen from Buon Italia, both during the cooking and as a &#8216;topping&#8217; once the pasta had been divided into shallow bowls<\/li>\n<li>the wine was an Italian (Alba) white, Vigneto Masera <a href=\"http:\/\/www.marcdegrazia.com\/italian-wine-selections\/italian-wine-selections\/massone-stefano-gavi-vigneto-masera-2015.html\">Stefano Massone Gavi 2014<\/a><\/li>\n<li>the music was the entire album, &#8216;<a href=\"https:\/\/yarnwire.bandcamp.com\/album\/yarn-wire-currents-vol-1\">Yarn\u200b\/\u200bWire\u200b\/\u200bCurrents Vol. 1<\/a>&#8216;, which was one of 3 we purchased tonight after <a href=\"http:\/\/yarnwire.org\/\">that awesome ensemble<\/a>&#8216;s magnificent performance of <a href=\"http:\/\/michaelgordonmusic.com\/news\">Michael Gordon&#8217;s &#8216;Material&#8217;<\/a>\u00a0at <a href=\"http:\/\/www.millertheatre.com\/\">Miller Theatre<\/a><\/li>\n<\/ul>\n<\/blockquote>\n","protected":false},"excerpt":{"rendered":"<p>What to say about this simple assemblage?
