{"id":8163,"date":"2016-05-11T20:03:05","date_gmt":"2016-05-11T20:03:05","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=8163"},"modified":"2016-05-11T20:03:05","modified_gmt":"2016-05-11T20:03:05","slug":"seafood-sausage-browned-butter-vetch-sunchokes-kale","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=8163","title":{"rendered":"seafood sausage, browned butter, vetch; sunchokes; kale"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8169\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/05\/seafood_sausage_kale_sunchoke_shoots.jpg\" alt=\"seafood_sausage_kale_sunchoke_shoots\" width=\"600\" height=\"450\" \/><\/p>\n<p>The meal\u00a0was surf [but with a pork\u00a0casing]\u00a0&amp; turf [otherwise\u00a0only vegetables], even if it\u00a0looks downright earthy.<\/p>\n<p>It was.<\/p>\n<ul>\n<li>four sweet seafood sausages from <a href=\"http:\/\/lobsterplace.com\/\">The Lobster Place<\/a>\u00a0[salmon, shrimp cod, scallops, Italian seasonings, fennel seed, shallots, pepper, fresh parsley, pork casing]\u00a0pan-grilled for about 10 minutes, turning regularly, accompanied by a brown butter sauce\u00a0made by melting a third of a stick of rich (with\u00a0a higher\u00a0fat percentage than virtually any butter available in stores in the U.S.) \u2018<a href=\"http:\/\/kerrygoldusa.com\/products?category=2\">Kerrygold Pure Irish Butter<\/a>\u2018 in a skillet over medium-high heat, whisking occasionally, until the milk solids had turned brown, removed from the heat, the juice of about a third of an\u00a0organic\u00a0lemon whisked in, along with 4 or 5 teaspoons (yeah) of brined wild\u00a0capers (rinsed, drained, and dried), seasoned to taste with salt and butter, the chopped bulb of one ramp from Lucky Dog Organic Farms stirred into the butter, which was poured over the sausages on the plates, followed by a\u00a0few washed sprigs of <a href=\"https:\/\/en.wikipedia.org\/wiki\/Vicia\">vetch<\/a>\u00a0[see image below] from Lani&#8217;s Farm, with their purple flowers<\/li>\n<li>kale from Alewife Farm, wilted in warm olive oil along with a small amount of thin strips of part of a seeded Sierra pepper, seasoned with salt and pepper, drizzled with a little more oil<\/li>\n<li>thin artichoke\u00a0shoots from Lani&#8217;s Farm [see image below], washed, the stems separated from the leaves at the top and cut into one-inch lengths, saut\u00e9ed in a heavy copper pan over medium heat until beginning to soften, then 2 Italian bay leaves, 1 finely-sliced clove of garlic from Trader Joe&#8217;s, introduced into the pan, along with\u00a0the reserved leaves, stirred for a minute or so, and a small splash of white wine vinegar, salt, and pepper mixed\u00a0in and cooked\u00a0for a couple more\u00a0minutes,\u00a0the bay removed, and strips of the ramp leaves added<\/li>\n<li>the wine was a French (Provence) ros\u00e9,\u00a0<a href=\"http:\/\/www.chelseawinevault.com\/triennes-vin-de-pays-de-mediterranee-rose-2015\">Triennes Vin de Pays de Mediterran\u00e9e Ros\u00e9 2015<\/a>, than which, although it was very good, it turned out something sturdier\u00a0would have been more\u00a0appropriate for\u00a0this meal (we can&#8217;t always call it, especially when the meal is at least partially improvised at the last minute)<\/li>\n<li>the music was several works, including Nicolas Bacri&#8217;s Symphony No. 4, from the album, &#8216;<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?ordertag=Comprecom127890-303005&amp;album_id=309529\">Sturm Und Drang<\/a>&#8216;, which includes\u00a0works by Bacri, Batiashvili, Leleux, Bezaly, Kantorow,\u00a0and others<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8185\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/05\/vetch.jpg\" alt=\"vetch\" width=\"600\" height=\"450\" \/><\/p>\n<p>vetch [<em>vicia ervilia<\/em>]<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8184\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/05\/choke_shoots-copy.jpg\" alt=\"choke_shoots copy\" width=\"600\" height=\"450\" \/><\/p>\n<p>spring shoots of Jerusalem artichoke [<em>helianthus tuberosus<\/em>]<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The meal\u00a0was surf [but with a pork\u00a0casing]\u00a0&amp; turf [otherwise\u00a0only vegetables], even if it\u00a0looks downright earthy.
