{"id":7834,"date":"2016-04-17T15:51:31","date_gmt":"2016-04-17T15:51:31","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=7834"},"modified":"2016-04-17T15:51:31","modified_gmt":"2016-04-17T15:51:31","slug":"pasta-e-ceci-with-foraged-garlic-mustard-greens","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=7834","title":{"rendered":"pasta e Ceci with foraged garlic mustard greens"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7837\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/04\/pasta_e_ceci_mustard_greens.jpg\" alt=\"pasta_e_ceci_mustard_greens\" width=\"600\" height=\"450\" \/><\/p>\n<p>We&#8217;ve <a href=\"http:\/\/food.hoggardwagner.org\/2016\/02\/11\/pasta-e-ceci-garlic-anchovy-tomato-rosemary-chickpea\/\">already<\/a> enjoyed the\u00a0basic\u00a0recipe for this luscious pasta twice. \u00a0But\u00a0I&#8217;ve never before had the privilege of welcoming <em>foraged<\/em> <a href=\"http:\/\/www.foragedfoodie.blogspot.com\/2013\/05\/why-you-should-forage-eat-garlic.html\">garlic mustard greens<\/a> into my kitchen; last night\u00a0this dish became\u00a0the medium. I decided to mix most of them\u00a0into the pasta at the very end of the cooking, and sprinkle a few\u00a0of the most tender shoots on the top once the\u00a0mix\u00a0had been introduced\u00a0into two bowls.<\/p>\n<p>We&#8217;re not likely to be the only Greenmarket patrons who would like \u00a0to thank <a href=\"http:\/\/civileats.com\/2014\/06\/16\/starting-out-a-new-farmers-first-growing-season\/\">Alewife Farm<\/a> for collecting these wonderful greens, and also for another,\u00a0almost equally stunning market innovation, arugula rabe, which starred in an\u00a0entr\u00e9e\u00a0<a href=\"http:\/\/food.hoggardwagner.org\/2016\/04\/16\/parsley-cod-spring-garlic-savory-potato-arugula-rabe\/\">the night before<\/a>. I&#8217;m\u00a0looking forward to more surprises from these folks, and from so many other farmers I visit each\u00a0week.<\/p>\n<ul>\n<li>3 tablespoons of\u00a0olive oil, 2 medium cloves of chopped garlic from Whole Foods, 2 generously-sized rosemary sprigs from Stokes Farm, and\u00a04 rinsed and fileted salted anchovies from Buon Italia, briefly saut\u00e9ed inside a large non-reactive pot until the anchovies had broken up, a 16-ounce can of San Marzano tomatoes (already-chopped or whole, and ideally without basil), with the juices, added and cooked for 10 minutes, crushing with a wooden spoon if the tomatoes are whole, salt added to taste, the heat increased and a can of good chick peas, with their liquid, poured in, along with about 2 cups of good chicken broth\u00a0or water, and a third sprig of rosemary, everything brought to a soft boil before half a pound of <a href=\"http:\/\/www.setaro.it\/it\/index.html\">Setaro<\/a>\u00a0&#8216;<em><a href=\"http:\/\/www.setaro.it\/img_corta_speciale\/Setaro%20Nodi%20Marini.jpg\">nodi marini<\/a>&#8216;\u00a0<\/em>from <a href=\"http:\/\/www.buonitalia.com\/\">Buon Italia<\/a> was added (alternatively, some other small pasta, like farfalle or a small penne or rigatoni can be used), the heat now reduced to a healthy simmer until\u00a0the pasta was cooked <em>al dente\u00a0<\/em>and the broth thick, while\u00a0stirring frequently (this\u00a0may\u00a0take\u00a0half an hour),\u00a0adding more liquid if necessary, stirring in most of a quarter pound of washed foraged garlic mustard greens from Alewife Farm before lifting the finished pasta\u00a0into bowls, where it was drizzled with a little olive oil, scattered with the remaining (selected, smaller greens) and sprinkled with good grated Parmesan cheese from Buon Italia\u00a0[<a href=\"http:\/\/food52.com\/recipes\/899-down-and-dirty-pasta-e-ceci\">the basic recipe<\/a>\u00a0for the pasta comes from <a href=\"http:\/\/food52.com\/\">food52.com<\/a>, but I have altered or annotated it here, mostly to reflect my own experience]<\/li>\n<li>the wine was an Italian (Piedmont) red, <a href=\"http:\/\/www.chelseawinevault.com\/poderi-roset-dolcetto-d-alba-2013-sustainable\">Poderi Roset Dolcetto d&#8217;Alba 2013<\/a><\/li>\n<li>the gorgeous music was <a href=\"http:\/\/www.christophercerrone.com\/invisible-cities\/\">Christopher Cerrone&#8217;s &#8216;Invisible Cities&#8217;: An invisible opera for wireless headphones&#8217;<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>We&#8217;ve already enjoyed the\u00a0basic\u00a0recipe for this luscious pasta twice. \u00a0But\u00a0I&#8217;ve never before had the privilege of welcoming foraged garlic mustard greens into my kitchen; last night\u00a0this dish became\u00a0the medium.
