It&#8217;s beautiful and it&#8217;s delicious (and it&#8217;s not broccoli).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7819\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/04\/cod_arugula_rabe_Norland.jpg\" alt=\"cod_arugula_rabe_Norland\" width=\"600\" height=\"450\" \/><\/p>\n<p>The assignment was to cook\u00a0a handsome filet of\u00a0cod without using the\u00a0oven (which is awaiting service), and I actually had some\u00a0choice, even if the word &#8216;roast&#8217;\u00a0appears in almost all of the recipes in my files.\u00a0Mark Bittman&#8217;s &#8216;Classic Saut\u00e9ed&#8217;, included <a href=\"http:\/\/www.nytimes.com\/2011\/04\/03\/magazine\/mag-03Eat-t.html\">on this page<\/a>\u00a0(where I had previously only borrowed ideas from the &#8216;Roasted&#8217; section),\u00a0did not. Because of\u00a0its simplicity, knowing that it\u00a0would show off the virtues of a great fish, both local and freshly caught, I went with it.<\/p>\n<ul>\n<li>one single 17-ounce filet of cod from Pura Vida Seafood, divided into two portions (only for a little more ease in turning), lightly dredged\u00a0in\u00a0coarse stone-ground flour, then dipped\u00a0into a mixture of one\u00a0large beaten egg from Millport Dairy and half of a cup of chopped parsley from Eataly, saut\u00e9ed over medium-high heat in a mix\u00a0of olive oil and\u00a0\u2018<a href=\"http:\/\/kerrygoldusa.com\/products?category=2\">Kerrygold Pure Irish Butter<\/a>\u2018 (one tablespoon each), turning once, for about 6 minutes, garnished with chopped lovage from\u00a0Two Guys From Woodbridge, drizzled with a little lemon juice<\/li>\n<li>four wonderfully sweet Norland red potatoes from Lucky Dog Organic Farm, scrubbed and boiled unpeeled, quartered, tossed with some of the Kerrygold butter, salt, pepper, wild garlic from Lani&#8217;s Farm (previously softened in a little butter, and\u00a0winter savory from Stokes Farm<\/li>\n<li>arugula rabe (yes, <em>arugula<\/em> rabe) from Alewife Farm braised in a heavy pot with a little olive oil in which a single\u00a0halved clove of garlic from Whole Foods had begun\u00a0to brown, then seasoned with salt and pepper, drizzled with more olive oil<\/li>\n<li>the wine was a French (Bordeaux) white, <a href=\"http:\/\/www.chelseawinevault.com\/all\/chateau-lamothe-de-haux-bordeaux-blanc-2014\">Ch\u00e2teau Lamothe de Haux Bordeaux Blanc 2014<\/a>,\u00a0from Chelsea Wine Vault<\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=126213\">Aulis Sallinen: Symphony No. 2,\u00a0and Symphony No.\u00a04 (&#8216;Dialogue for Percussion solo and Orchestra&#8217;,\u00a0with Martin Orraryd, percussion), and the\u00a0Horn Concerto (Esa Tapani, french horn), all three works with\u00a0Ari Rasilainen directing the\u00a0Norrk\u00f6ping Symphony Orchestra\u00a0<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>and flowers too &nbsp; I had never heard of arugula rabe before stopping by Alewife Farm on Saturday, and I can&#8217;t find much that is useful on line, but maybe all we really have to know is the name, which simply means &#8216;sprouted\u00a0arugula&#8217;.
