Seafood, saut\u00e9ed in olive oil and butter over high heat until golden brown (2-3 minutes on the first side, 1-2 minutes on the other, served with a tomato butter composed earlier\u00a0by melting some\u00a0\u2018<a href=\"http:\/\/kerrygoldusa.com\/products?category=2\">Kerrygold Pure Irish Butter<\/a>\u2018 and adding one chopped\u00a0shallot from Mountain Sweet Berry Farm,\u00a0cooking it until softened and fragrant, removed from the heat, allowed to cool for 2 or 3 minutes, then tossed with quartered\/sixth-ed Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods, seasoned with salt, and\u00a0chopped fresh oregano\u00a0from Stokes Farm\u00a0added, along with a few drops of red wine (Chianti) vinegar<\/li>\n<li>young, tender broccoli rabe from from Migliorelli Farm, wilted in olive oil flavored\u00a0with bruised garlic from Whole Foods, seasoned with salt and pepper, put on two\u00a0plates and drizzled with more olive oil<\/li>\n<li>the wine was a California white,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/f--stephen-millier-angels-reserve-chardonnay-2014.htm\">F. Stephen Millier Angels Reserve Chardonnay 2014<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=192031\">two symphonies by Aulis Sallinen, No. 3 and No. 5<\/a>,\u00a0 Ari Rasilainen conducting the\u00a0Rheinland-Pfalz State Philharmonic Orchestra<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>One of these days I&#8217;m going to get the &#8216;turning once&#8217; down pat.
