{"id":7371,"date":"2016-03-11T23:29:47","date_gmt":"2016-03-11T23:29:47","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=7371"},"modified":"2016-03-11T23:29:47","modified_gmt":"2016-03-11T23:29:47","slug":"crab-cake-salsa-orpine-potato-wild-garlic-lovage-cress","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=7371","title":{"rendered":"crab cake, salsa, orpine; potato, wild garlic, lovage, cress"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/03\/crab_cake_salsa_potato.jpg\" rel=\"attachment wp-att-7373\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7373\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/03\/crab_cake_salsa_potato.jpg\" alt=\"crab_cake_salsa_potato\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>looks like a flattened bouquet<\/p>\n<p>&nbsp;<\/p>\n<p>Yes, it definitely looks like I had a lot of greenery on hand, but I think I managed to disguise some of its volumes with a little judicious mixing with other elements of the meal.<\/p>\n<p>And this wasn&#8217;t just ordinary greenery,\u00a0as it included upland cress, wild garlic (bulb and green), stone crop, lovage, fresh oregano (ordinary, except that it&#8217;s\u00a0a survivor from last fall), and borage flowers!<\/p>\n<ul>\n<li>two crab cakes from PE &amp; DD Seafood (ingredients: crab, egg, flour, red &amp; green peppers, garlic, salt, pepper, breadcrumbs, mayonnaise, milk, celery, parsley), heated in a small heavy cast iron pan, 3\u00a0to 4\u00a0minutes on\u00a0each side, and served on a salsa\u00a0composed of 6\u00a0Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods, which had been\u00a0chopped and combined\u00a0with salt, freshly-ground black pepper, a bit of homemade French Basque <em><a href=\"https:\/\/en.wikipedia.org\/wiki\/Espelette_pepper\">piment d\u2019Espellate<\/a><\/em>\u00a0purchased in a small town north of Baie-Comeau, Quebec last year from the producer\u2019s daughter, some crushed dried pepperoncini, and some chopped fresh oregano\u00a0leaves from Stoke&#8217;s Farm (which I have been husbanding for months in the refrigerator!), the salsa covering much of a bed of undressed stone crop (a succulent, aka orpine, aka sedum) from Lani&#8217;s Farm, the dish finished with a few drops of olive oil, some of the liquid remaining from the salsa, and some gorgeous blue borage flowers from\u00a0Two Guys from Woodbridge<\/li>\n<li>five\u00a0red Norland potatoes from John D. Madura Farm (these potatoes have grown\u00a0especially\u00a0sweet over the winter), scrubbed, boiled in salted water unpeeled, halved, tossed with olive oil and chopped tiny wild garlic bulbs and stems from Lani\u2019s Farm, sprinkled with chopped lovage from Two Guys from Woodbridge, and mixed, still in the pan in which they were boiled, with\u00a0cultivated upland cress\u00a0from Alewife Farm<\/li>\n<\/ul>\n<p>There was a cheese course included 3 cheeses and thin toasts of potato bread.<\/p>\n<ul>\n<li>the cheeses were\u00a0Consider Bardwell\u2019s \u2018Experience\u2019, a pasteurized cow cheese still in the developing stage; their\u00a0\u2018Manchester\u2019 goat\u00a0cheese; and an adaged goat cheese from\u00a0<a href=\"http:\/\/www.vermontcreamery.com\/\">Vermont Creamery<\/a>,\u00a0\u2018<a href=\"http:\/\/www.vermontcreamery.com\/coupole-1\">Coupole<\/a>\u2018<\/li>\n<li>with the cheese there were very\u00a0thin slices of\u00a0potato bread (Balthazar\u2019s \u2018Potato Fendu\u2019) from Whole Foods, toasted<\/li>\n<\/ul>\n<ul>\n<li>wine throughout was a South African (Swartland) white, <a href=\"http:\/\/aabadenhorst.com\/our-wines\/\">Badenhorst Secateurs<\/a> Chenin Blanc 2013, from <a href=\"http:\/\/flatiron-wines.com\/badenhorst-secateurs-chenin-blanc-2013.html\">Flatiron Wines &amp; Spirits<\/a><\/li>\n<li>the music with the first course was Q2 streaming, &#8216;O Haupt voll Blut und Wunden&#8217; by\u00a0<a href=\"http:\/\/robertphillipsmusic.com\/\">Robert Phillips<\/a>, &#8216;Indigena&#8217; by\u00a0<a href=\"http:\/\/www.tanialeon.com\/\">Tania Leon<\/a>, and Violin Concerto No. 1, &#8220;Omnipresence&#8221;\u00a0by\u00a0<a href=\"http:\/\/www.huangruo.com\/\">Huang Ruo<\/a><\/li>\n<li>the music with the cheese, also via Q2, was gamelan work by <a href=\"http:\/\/www.gamelan.org\/jodydiamond\/\">Jody Diamond<\/a><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>looks like a flattened bouquet &nbsp; Yes, it definitely looks like I had a lot of greenery on hand, but I think I managed to disguise some of its volumes with a little judicious mixing with other elements of the meal.
