{"id":7316,"date":"2016-03-07T19:54:40","date_gmt":"2016-03-07T19:54:40","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=7316"},"modified":"2016-03-07T19:54:40","modified_gmt":"2016-03-07T19:54:40","slug":"pork-tenderloin-sage-roast-potato-herbs-tomato-collards","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=7316","title":{"rendered":"pork tenderloin, sage; roast potato, herbs; tomato; collards"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/03\/tenderloin_potato_tomato_collards.jpg\" rel=\"attachment wp-att-7317\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7317\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/03\/tenderloin_potato_tomato_collards.jpg\" alt=\"tenderloin_potato_tomato_collards\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>The entr\u00e9e was\u00a0unanticipated: I had gone to the Greenmarket\u00a0stand\u00a0of our friendly <a href=\"http:\/\/www.considerbardwellfarm.com\/\">Vermont cheese makers<\/a>\u00a0to buy one of their new &#8216;experimental&#8217; cheeses, but when I arrived Peter showed me some quite small frozen pork tenderloins, and I couldn&#8217;t pass them up.<\/p>\n<p>Consider Bardwell\u00a0produces absolutely wonderful goat and cow cheeses, and a certain amount of meat from the farm has become increasingly visible at the market. It&#8217;s\u00a0all been first rate, but this was the first time I had taken home any of their pork, and it was equally delicious.<\/p>\n<ul>\n<li>two 6 or 7-ounce pork tenderloins from Consider Bardwell Farm, dried, rubbed all over with a mixture of chopped garlic from John D. Madura Farm, chopped sage from Eataly, salt, and pepper, very quickly sealed over a medium-high flame in a copper <em>au gratin<\/em> pan,\u00a0placed in a 450\u00ba oven for about 6 minutes, the pan removed to the top of the range, the pork\u00a0put onto\u00a0warm\u00a0plates, some scissored\u00a0wild garlic from Lani\u2019s Farm scattered into the pan over medium heat, along with 2 halved Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods, all\u00a0quickly stirred around a bit in the juices with a small flat-end wooden spatula, the tomatoes then arranged on the plates and sprinkled with chopped oregano from Stokes Farm and the pan juices drizzled over the roasted pork [that&#8217;s a very old flat wooden toothpick in the picture; it held down the thin end flap of the tenderloin while it was cooking]<\/li>\n<li>Yukon Gold Potatoes from Norwich Meadows Farm, scrubbed, cut (unpeeled) into half-moon shapes, tossed in a little olive oil, chopped thyme from Forager&#8217;s, 5 garlic cloves,\u00a0<em>unpeeled<\/em>\u00a0(to prevent them from buring) from John D. Madura Farm, salt, and pepper, then roasted, uncrowded, in an unglazed ceramic pan at 425\u00ba for about 25 minutes, potatoes and garlic removed and tossed with chopped lovage from Two Guys from Woodbridge<\/li>\n<li>the remainder\u00a0of the\u00a0small store\u00a0of tender collard greens I had picked up from Norwich Meadows Farm a few day ago and used with <a href=\"http:\/\/food.hoggardwagner.org\/2016\/03\/05\/duck-wild-garlic-lovage-roasted-potatoes-sage-collards\/\">the duck breast<\/a>, washed, drained, then braised very lightly (they were very tender) in a heavy pot in which one halved garlic clove\u00a0from Norwich Meadows Farm had been allowed to sweat in some olive oil, the dish finished with salt, pepper, and a drizzle of olive oil<\/li>\n<li>the wine was a Spanish (Valladolid) red, <a href=\"http:\/\/www.chelseawinevault.com\/rejadorada-toro-reja-joven-2014\">Bodegas Rejadorada Reja Toro 2014<\/a><\/li>\n<li><span style=\"line-height: 1.55;\"> the music was, during\u00a0the earlier part of the meal, that of a\u00a0tragic (dead at 18, in 1715) collector, commissioner and composer of music,\u00a0<a href=\"http:\/\/Johann Ernst Prinz von Sachsen-Weimar\">Johann Ernst Prinz von Sachsen-Weimar, his &#8216;Complete Violin Concertos&#8217;<\/a>, and, later, a work completely unrelated,\u00a0<a href=\"http:\/\/iceorg.org\/digitice\/detail\/davis-on-the-nature-of-thingness\">Nathan Davis&#8217; magnificent 21-minute piece, &#8216;On The Nature of Thingness&#8217;<\/a>\u00a0(2011),\u00a0played by the <a href=\"http:\/\/iceorg.org\/\">International Contemporary Ensemble [ICE]<\/a>\u00a0<\/span><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>The entr\u00e9e was\u00a0unanticipated: I had gone to the Greenmarket\u00a0stand\u00a0of our friendly Vermont cheese makers\u00a0to buy one of their new &#8216;experimental&#8217; cheeses, but when I arrived Peter showed me some quite small frozen pork tenderloins, and I couldn&#8217;t pass them up.
