and the salsa had a fairly complex zing [zip?], probably because it included\u00a0both a\u00a0Basque paprika\u00a0thing\u00a0<em>and<\/em>\u00a0some\u00a0pepperoncino.<\/p>\n<ul>\n<li>two crab cakes from PE &amp; DD Seafood (ingredients: crab, egg, flour, red &amp; green peppers, garlic, salt, pepper, breadcrumbs, mayonnaise, milk, celery, parsley), heated in a heavy cast iron pan, 3\u00a0to 4\u00a0minutes on\u00a0each side, and served on a bed of 6\u00a0Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods, which had been\u00a0chopped and combined\u00a0with salt, black pepper, a bit of homemade French Basque <em><a href=\"https:\/\/en.wikipedia.org\/wiki\/Espelette_pepper\">piment d\u2019Espellate<\/a><\/em>\u00a0purchased in a small town north of Baie-Comeau, Quebec last year from the producer\u2019s daughter, some crushed dried pepperoncini, and some chopped fresh oregano\u00a0leaves from Stokes\u00a0Farm, the cakes\u00a0finished with a drizzle of juices\u00a0from the salsa<\/li>\n<li>a total of 6 red potatoes (white flesh) from Lucky Dog Organic Farm, boiled, drained, dried in the pan,\u00a0rolled in olive oil, scattered with sliced scallions and chopped parsley, both from Eataly<\/li>\n<li>more of the\u00a0very tasty and very beautiful cultivated upland cress from Alewife Farm (which we had also <a href=\"http:\/\/food.hoggardwagner.org\/2016\/02\/24\/lenon-roasted-pork-chops-roasted-sweet-potatoes-cress\/\">enjoyed the day before<\/a>), washed, air-dried, and dressed only with some good olive oil<\/li>\n<li>the wine was an Oregon (Willamette) white, <a href=\"http:\/\/www.chelseawinevault.com\/white-wine\/pinot-grigio-gris\/kings-ridge-pinot-gris-willamette-valley-2014\">Kings Ridge Oregon Pinot Gris 2014<\/a><\/li>\n<li>the music was [the first half of] a wonderful recording of\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=213289\">Handel&#8217;s &#8216;Alcina&#8217;, Alan Curtis conducting <em>Il Complesso Barocco<\/em>, with Kobie van Rensburg, Vito Priante, Joyce DiDonato, Sonia Prina, Karina Gauvin, Mait\u00e9 Beaumont, and\u00a0Laura Cherici<\/a>\u00a0[make sure you read <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=213289\">the synopsis<\/a>, even if you aren&#8217;t interested in the music of queer baroque Saxon composers]<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>The potatoes were really sweet, mirabile dictu;\u00a0the cress actually exciting, if \u00a0you can also imagine that;
