it was the basis for the one I&#8217;ve been using for years. \u00a0It&#8217;s a classic, or at least I think so, for its ability to showcase, mostly unadorned, the taste of a superb wild fish,\u00a0as well as for the ease with which it can be prepared.<\/p>\n<p>This time I added some rather flashy micro greens in lieu of the parsley specified in\u00a0Bittman&#8217;s\u00a0original recipe.<\/p>\n<ul>\n<li>one 13- or 14-ounce cod fillet from American Seafood Company at the Union Square Greenmarket, prepared along the lines of\u00a0a\u00a0<a href=\"http:\/\/dinersjournal.blogs.nytimes.com\/2008\/12\/10\/recipe-of-the-day-ligurian-fish-and-potatoes\/\">recipe<\/a> from <a href=\"http:\/\/markbittman.com\/\">Mark Bittman<\/a>\u00a0which I came across almost\u00a012 years ago: I cut the fillet into two pieces and laid\u00a0them both\u00a0on a bed of coarse sea salt and completely covered them\u00a0with more salt, before\u00a0setting them\u00a0aside\u00a0while I sliced, to a thickness of less than 1\/4 inch about 12 ounces of\u00a0small German Butterball potatoes from Tamarack Hollow Farm, scattered\u00a0them in a baking pan with a scant\u00a0tablespoon\u00a0of olive oil, salt, and pepper, and cooked them for 30 minutes or so in a 400\u00ba oven, or until tender,\u00a0meanwhile thoroughly immersing the cod in several changes of water\u00a0and drying the two pieces\u00a0before placing them\u00a0in the pan on top of the potatoes with a little oil drizzled on top and some\u00a0freshly-ground pepper scattered over them as well, the pan returned to the oven\u00a0for\u00a08 to 12 minutes (depending on the\u00a0thickness of the cod), garnished with &#8216;<em>Hong Vit<\/em>&#8216; micro Asian radish greens from Windfall Farms<\/li>\n<li>a handful of the very last of the curly winter\u00a0kale from Tamarack Hollow farm, saut\u00e9ed in olive oil in which\u00a0one medium clove of garlic from Keith&#8217;s Farm, split, had first been allowed to sweat for a few minutes<\/li>\n<li>the wine was a French (Languedoc\/Pays\u00a0d&#8217;Oc) white, <a href=\"http:\/\/www.chelseawinevault.com\/shop-by\/this-month-s-top-10\/demoiselles-de-castelnau-cuvee-l-etang-picpoul-de-pinet-2014\">Demoiselles de Castelnau Cuv\u00e9e L&#8217;Etang Picpoul de Pinet 2014<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=873985\">David Matthews&#8217;
