celeriac fries, parsley; micro arugula"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/01\/lamb_chops_celeriac_frites_micro_arugula.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-6891\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/01\/lamb_chops_celeriac_frites_micro_arugula.jpg\" alt=\"lamb_chops_celeriac_frites_micro_arugula\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>I was excited about the opportunity of chopping up\u00a0what seemed a first to be a very large celery root to serve\u00a0what I thought would be a very generous amount\u00a0of <em>pseudo<\/em>&#8211;<em>frites<\/em>, so early in the evening\u00a0I cancelled the idea of including\u00a0roasted Brussels sprouts, however special\u00a0the opportunity of enjoying them from a local farm in late January might be, thinking that incorporating another vegetable into the meal might be a little too much. \u00a0And then I\u00a0added a handful of micro greens, both for their color and for the effect\u00a0they might add of an imagined additional volume.<\/p>\n<p>The Brussels sprouts could wait.<\/p>\n<p>The celery fries turned out to not be\u00a0smaller in number than I had expected, so\u00a0the little greens ended up carrying more than their weight (or at least offering a\u00a0fresh\u00a0diversion from the browns in the meal).<\/p>\n<ul>\n<li>four small lamb loin chops from 3-Corner Field Farm, cooked on a very hot grill pan for about 5 or\u00a06\u00a0minutes on each side, seasoned with salt and pepper after they were first turned over, finished with lemon, chopped\u00a0winter savory form Stokes Farm, and olive oil<\/li>\n<li>one celery root (about 12-13 ounces) from Norwich Meadows Farm, scrubbed, peeled, and cut into the size and shape of potato<em> frites<\/em>, tossed in a bowl with olive oil, a half teaspoon of Spanish paprika <em>picante<\/em>, salt, and pepper, spread onto a medium-size Pampered Chef unglazed ceramic pan, and roasted at 400\u00ba until brown and cooked through, removed\u00a0to two\u00a0plates, and tossed with chopped parsley from Eataly<\/li>\n<li>micro arugula greens from Lucky Dog Organic, washed, dried, scattered on the plates and dressed with good olive oil, a squeeze of one small, local lemon\/lime from Fantastic Gardens of Long Island, salt, and pepper<\/li>\n<li>the wine was a California (Lodi) red,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/jc-van-staden-malbec-lodi-2014.htm\">JC van Staden Malbec Lodi 2014<\/a><\/li>\n<li>the music was\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/Drilldown?name_id1=1598&amp;name_role1=1&amp;comp_id=9886&amp;bcorder=15&amp;name_id=80609&amp;name_role=3\">Bruckner&#8217;s Symphony No 8, Jaap\u00a0Van Zweden conducting the Netherlands Radio Philharmonic<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I was excited about the opportunity of chopping up\u00a0what seemed a first to be a very large celery root to serve\u00a0what I thought would be a very generous amount\u00a0of pseudo&#8211;frites, so early in the evening\u00a0I cancelled the idea of including\u00a0roasted Brussels sprouts, however special\u00a0the opportunity of enjoying them from a local farm in late January &hellip;<\/p>\n","protected":false},"author":1,"featured_media":0,"comment_status":"closed","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[2],"tags":[],"class_list":["post-6886","post","type-post","status-publish","format-standard","hentry","category-meals-at-home"],"_links":{"self":[{"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=\/wp\/v2\/posts\/6886","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=\/wp\/v2\/users\/1"}],"replies":[{"embeddable":true,"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=%2Fwp%2Fv2%2Fcomments&post=6886"}],"version-history":[{"count":0,"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=\/wp\/v2\/posts\/6886\/revisions"}],"wp:attachment":[{"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=%2Fwp%2Fv2%2Fmedia&parent=6886"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=%2Fwp%2Fv2%2Fcategories&post=6886"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=%2Fwp%2Fv2%2Ftags&post=6886"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
