{"id":6833,"date":"2016-01-26T07:08:04","date_gmt":"2016-01-26T07:08:04","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=6833"},"modified":"2016-01-26T07:08:04","modified_gmt":"2016-01-26T07:08:04","slug":"jaegerwurst-roasted-turnips-with-leeks-red-cabbage-salad","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=6833","title":{"rendered":"Jaegerwurst; roasted turnips with leeks; red cabbage salad"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/01\/Jaegermeister_turnips_red_cabbage.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-6837\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/01\/Jaegermeister_turnips_red_cabbage.jpg\" alt=\"Jaegermeister_turnips_red_cabbage\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>This meal was incredibly German, and yet, ..not really. \u00a0To be honest, it was a not quite traditional take on what were more or less\u00a0traditional German ingredients.<\/p>\n<p>Actually, I wasn&#8217;t really trying for any particular\u00a0effect.\u00a0 Early in the day\u00a0I thought of\u00a0looking for kielbasa, which is only <em>sort<\/em> of a German sausage. \u00a0Just before that I had learned by looking on line that there were no fish sellers at the Greenmarket today (no surprise, considering the weekend&#8217;s weather), so I had to look elsewhere for inspiration.<\/p>\n<p>Well, it surely was cold out, and I already had on hand the kind of vegetables which would love to accompany a spicy central European-type sausage, but when I got to\u00a0Dickson Farmstand Meats, Philip told me that they had no\u00a0kielbasa; he suggested their Jaegerwurst as a reasonable substitute.<\/p>\n<p>It was more than reasonable. \u00a0The sausage was super, and the vegetables seemed to enjoy it as much as we did.<\/p>\n<ul>\n<li>three links of very good &#8216;Jagerwurst&#8217; (a spicy smoked pork sausage) from Dickson Farmstand Meats, pan grilled, served with some good grainy Geman mustard from Whole Foods<\/li>\n<li>purple-topped turnips from Norwich Meadows Farm, washed, scrubbed, peeled, cut into half-inch-thick slices, tossed with oil, salt, and pepper, then roasted in an unglazed ceramic pan for 30 minutes\u00a0at 425\u00ba, a medium\u00a0leek from Whole Foods, sliced in half-inch segments, added half-way through, finished with chopped parsley from Eataly<\/li>\n<li>a composed salad, arranged on a plate to the side, using\u00a0the remainder of one small red cabbage from\u00a0Whole Foods, in\u00a0a rather\u00a0loose\u00a0interpretation of\u00a0<a href=\"http:\/\/www.urbanharvest.ca\/recipes\/show\/3116\/\">a delightful Kurt Guttenbrunner recipe<\/a>\u00a0I had cut out of \u2018New York\u2019 Magazine a10\u00a0years ago<\/li>\n<li>the wine was a California (Amador County) white, <a href=\"https:\/\/us.nakedwines.com\/wines\/s-a-amador-touriga-2014.htm\">S &amp;\u00a0A Amador Touriga 2014<\/a>, by\u00a0Sarah Wuethrich\u00a0and Ana Diogo_Draper<\/li>\n<li>the music was\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Marek_Janowski\">Marek Janowski<\/a>&#8216;s <a href=\"http:\/\/www.wagnerdiscography.com\/reviews\/rin\/rin80janowski.htm\">Dresden &#8216;Siegfried&#8217;<\/a>, an extraordinary, beautiful, very sensitive performance,\u00a0from\u00a0his\u00a01980-83 &#8216;RIng&#8217;, the &#8216;Siegfried&#8217;\u00a0with\u00a0Kollo,\u00a0Schreier,\u00a0Altmeyer<br \/>\nAdam,\u00a0Nimsgern,\u00a0Salminen,\u00a0Wenkel, and\u00a0Sharp<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This meal was incredibly German, and yet, ..not really. \u00a0To be honest, it was a not quite traditional take on what were more or less\u00a0traditional German ingredients.
