{"id":6808,"date":"2016-01-23T20:03:49","date_gmt":"2016-01-23T20:03:49","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=6808"},"modified":"2016-01-23T20:03:49","modified_gmt":"2016-01-23T20:03:49","slug":"lemon-marinated-grilled-squid-celeriac-with-thyme-tomato","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=6808","title":{"rendered":"lemon-marinated grilled squid; celeriac with thyme; tomato"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/01\/squid_tomato_celeriac.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-6811\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/01\/squid_tomato_celeriac.jpg\" alt=\"squid_tomato_celeriac\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>possibly the best squid we had ever had, but I cannot explain why that was so<\/p>\n<p>&nbsp;<\/p>\n<p>I was mostly concerned with assembling what I needed for a small dinner party\u00a0the next\u00a0night, Saturday, on a day when the forecast of a blizzard had already told me that\u00a0I\u00a0was not certain I\u00a0would be able to find anything essential to my plan; the choice of an entr\u00e9e for the night before was an afterthought.<\/p>\n<p>But I had at least remembered to bring something home. \u00a0I chose some squid,\u00a0from Paul&#8217;s\u00a0Pura Vida stand. \u00a0It was something I had prepared many times before, using\u00a0several different recipes, and I always enjoyed this cephalopod. \u00a0It&#8217;s a favorite for\u00a0both of us, because of its\u00a0taste, the ease with which it can be prepared, its global\u00a0ubiquitousness, and its sustainability.<\/p>\n<p><span style=\"line-height: 1.55;\">This time I opted for the <\/span><span style=\"line-height: 1.55;\">recipe<\/span><span style=\"line-height: 1.55;\">\u00a0which used the most lemon, because I had a supply of local <\/span><span style=\"line-height: 1.55;\">fruit<\/span><span style=\"line-height: 1.55;\">\u00a0back at home, and it wasn&#8217;t going to last forever.<\/span><\/p>\n<ul>\n<li>three quarters of a pound of cleaned squid, bodies and tentacles from Pura Vida Fisheries, marinated for about half an hour (half of that time in the refrigerator) in a mixture of lemon zest and lemon juice (both from Fantastic Gardens of Long Island, in the Union Square Greenmarket), thinly-sliced garlic\u00a0from Norwich Meadows Farm, olive oil, pungent\u00a0dried Italian oregano from Buon Italia, salt, and pepper, then removed from the marinade and pan-grilled briefly over high heat, arranged\u00a0on plates, sprinkled with fresh lemon juice and some chopped parsley from Eataly, served with halves of a tiny lime-like lemon (lemon-like lime?) from Fantastic Gardens of Long Island \u00a0[the basic squid recipe, with more specific instructions appears <a href=\"http:\/\/www.foodnetwork.com\/recipes\/oregano-lemon-grilled-calamari-recipe.html\">here<\/a>]<\/li>\n<li>one small-to-medium celery root from Norwich Meadows Farm, scrubbed, peeled, and cut into the size and shape of potato<em> frites<\/em>, tossed in a bowl with olive oil, several sprigs of thyme from Eataly, two cloves of garlic from Norwich Meadows Farm, unpeeled, salt, and pepper, spread onto a medium-size Pampered Chef unglazed ceramic pan, and roasted at 400\u00ba until brown and cooked through, removed, served on plates, and tossed with chopped parsley from Eataly<\/li>\n<li>the wine was a Spanish (Rueda) white, <a href=\"http:\/\/www.bodegasnaia.com\/naia-2010-en\">Naia D.O.
