I always have a number of types of pasta on hand, and\u00a0several kinds of dried chilies, and of course I&#8217;m never without parsley, but tomatoes and leeks\u00a0are a sometime thing, and sometimes they can&#8217;t wait any longer to be part of an entr\u00e9e.<\/p>\n<p>That, and a desire for an uncomplicated single-dish meal, was the background to this simple dinner.<\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>one large\u00a0lightly-smashed\u00a0Rocambole garlic clove from Keith\u2019s Farm and one and a half\u00a0dried chilies from Buon Italia, saut\u00e9ed together in olive oil until the garlic browned, the chilies removed, and 6\u00a0smallish leeks from Lucky Dog Organic Farm,\u00a0trimmed, split, washed, and sliced, added to the garlic oil and stirred until they wilted, freshly-ground black pepper and 5\u00a0Maine Backyard Farms tomatoes from Whole Foods\u00a0added to the pan and cooked, stirring occasionally until the leeks appeared to began to brown, the sauce tossed with about\u00a09\u00a0ounces of Setaro \u2018spaghetti chitarra\u2019 cooked <em>al dente<\/em>, and then more olive oil, some reserved pasta water, and a generous amount of chopped parsley from Phillips Farm<\/li>\n<li>the wine was an Italian (Tuscan) white,\u00a0<a href=\"http:\/\/www.fontaleoni.com\/en\/categoria\/galleria\/vernaccia_etichetta_verde-20.html\">Vernaccia di San Gimignano D.O.C.G. 2014<\/a><\/li>\n<li>the music was Bach&#8217;s viola di gamba\/cello suites [on &#8220;original and unoriginal instruments&#8221; &#8211; Louise Dubin], a part of the\u00a0<a href=\"https:\/\/www.cc-seas.columbia.edu\/wkcr\/story\/bach-festival-2015\">WKCR\u00a0Bach Fest<\/a>&#8216;s &#8216;gamba show&#8217;<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This dish has appeared on this site at least twice before, which is a testament to its appeal, but also to its usefulness.
