Its remarkable\u00a0goodness\u00a0was actually a surprise for\u00a0me. We enjoy skate and Romanesco broccoli very much, and I serve each with some regularity, but they were both\u00a0more tasty this time than\u00a0they\u00a0had ever been before.<\/p>\n<p>I can&#8217;t account for the exceptional\u00a0goodness\u00a0of the skate and its sauce, except to consider\u00a0the fact this was my first outing with a beautiful new copper skillet, and that\u00a0might\u00a0have\u00a0contributed something to the result. \u00a0The only\u00a0thing\u00a0novel about\u00a0the preparation\u00a0of the it-looks-like-cauliflower broccoli\u00a0was the fact that I inadvertently tossed the florets with\u00a0less olive oil than I had in the past, and that,\u00a0combined with their feathery tops, meant that there was more opportunity for them to develop a nutty, slightly toasted flavor.<\/p>\n<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/12\/skate_Romanesco.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-6542\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/12\/skate_Romanesco.jpg\" alt=\"skate_Romanesco\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<ul>\n<li>two\u00a0skate wings from P.E. &amp; D.D. Seafood, each divided into two sections, coated with a coarse polenta which had been\u00a0seasoned with salt and pepper, saut\u00e9ed in olive oil for a few minutes, removed from the pan, the pan\u00a0wiped with a paper towel, then some butter, chopped shallots from Phillips Farm, and sliced garlic from\u00a0Berried Treasures introduced into it\u00a0and stirred over a heat which had first been lowered, followed by the addition of a little more butter, juice from half of an organic lemon, and chopped parsley from Phillips Farm<\/li>\n<li>one fairly small Romanesco broccoli head from Phillips Farm, broken up into florets which were then tossed in a little olive oil, salt, pepper, and pepperoncino, spread onto a ceramic oven pan, roasted at 400\u00ba for about 25 minutes, removed from the oven, and, when the pan had begun to cool down, drizzled with olive oil and stirred<\/li>\n<\/ul>\n<p>The\u00a0entr\u00e9e\u00a0was followed by a small cheese course, because, well,.. because\u00a0the cheese\u00a0was there, and\u00a0because we didn&#8217;t want one of my favorites, Karen Weinberg&#8217;s, &#8216;<a href=\"http:\/\/berkshirefoodandtravel.com\/3-corner-field-farm\/\">Shushan Snow<\/a>&#8216;, from her family&#8217;s\u00a0<a href=\"http:\/\/www.dairysheepfarm.com\/\">3-Corner Field Farm<\/a>, to mature beyond its perfection.<\/p>\n<ul>\n<li>one section\u00a0of\u00a0a round\u00a0of &#8216;<a href=\"http:\/\/culturecheesemag.com\/cheese-library\/Shushan-Snow\">Shushan Snow<\/a>&#8216; sheep cheese from 3-Corner Field Farm, served with thin toasts made from a 4-day-old loaf of\u00a0Grand Daisy Pugliese Pane, from Whole Foods<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the wine throughout was a Canadian (Quebec) white,\u00a0<a href=\"http:\/\/www.lapresse.ca\/vins\/actualites\/201405\/01\/01-4762652-le-migneron-de-charlevoix-aura-son-vin.php\">Maurice\u00a0Dufour<\/a>\u2018s, Vinifie Chez Maurice Dufour Le Charlevoyou Muscat Osceola 2014 (the grapes are <a href=\"https:\/\/www.doubleavineyards.com\/p-972-osceola-muscat.aspx\">Osceola Muscat<\/a>,\u00a0a small, very winter-hardy white Muscat-type grape developed in Wisconsin, which M. Dufour purchases from\u00a0Royarnois Estate, a vineyard a few kilometers from his home and <em>chai <\/em>[it\u2019s a very limited production (we bought it <em>\u00e0 la maison<\/em>,\u00a0just\u00a0outside\u00a0Baie-Saint-Paul late last spring), and it\u2019s not available in the U.S., but if it were possible I would buy a case today]<\/li>\n<li>the music was once again a streaming of\u00a0the continuing WQXR annual 10-day, year-end Bach Festival, this time\u00a0a\u00a0broadcast of the composer&#8217;s dramatic<em>\u00a0<\/em>&#8216;<em>Johannespassion<\/em>&#8216;, BWV 245, in a performance\u00a0by the\u00a0Dunedin Consort which included\u00a0an &#8216;ideal&#8217; of the\u00a0original Lutheran vesper liturgy (here, organ and congregational chorales, organ prelude,\u00a0responsory, collect, blessing, another responsory, another chorale, and a final congregational chorale; it was awesome!<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>picture\u00a0of the skate, about a\u00a0minute after being place in the new skillet &nbsp; This was\u00a0a fairly simple meal, and an extremely good\u00a0one.
