{"id":6412,"date":"2015-12-17T07:19:53","date_gmt":"2015-12-17T07:19:53","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=6412"},"modified":"2015-12-17T07:19:53","modified_gmt":"2015-12-17T07:19:53","slug":"john-dory-leek-capers-saffron-collards-garlic-lemon-zest","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=6412","title":{"rendered":"John Dory, leek, capers, saffron; collards, garlic, lemon zest"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/12\/John_Dory_leeks_collards.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-6416\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/12\/John_Dory_leeks_collards.jpg\" alt=\"John_Dory_leeks_collards\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>I try\u00a0not to use the same recipe over and over again, even if my cooking style is to stay pretty minimal.\u00a0But when\u00a0we&#8217;re both hungry, I&#8217;m not really able to investigate a new approach, I end up repeating myself more often than I would want to.<\/p>\n<p>On Wednesday\u00a0I\u00a0brought home 4\u00a0beautiful John Dory fillets from the Greenmarket, and, knowing I had a little more time than usual, I\u00a0latched onto\u00a0an entirely new recipe, or at least it was new to\u00a0me. It tuned out\u00a0absolutely delicious. but I&#8217;m not sure\u00a0I will be using\u00a0it any time soon, only because it was, well.., a little too &#8216;saucy&#8221;.<\/p>\n<ul>\n<li>four shiny 3-ounce John Dory fillets from Blue Moon FIsh Company, seared for about 4 minutes in a mixture of olive oil and butter, flipped, and cooked for about another minute, then spooned with a sauce which was a part of a recipe from <a href=\"http:\/\/www.strandbooks.com\/seafood\/the-young-man-the-sea-recipes-crispy-fish-tales-from-esca\">David Pasternak&#8217;s &#8216;The Young Man and the Sea&#8217;<\/a>. \u00a0It started with\u00a0one smashed\u00a0rocambole garlic head from Keith\u2019s Farm and one bay leaf from Westside Market, which were cooked together until the garlic had softened, then some saffron threads from Spain\u00a0[via\u00a0I-have-no-idea-where, but purchased long ago] added and stirred in for a moment before the addition of some salt-packed capers from Buon Italia, previously\u00a0rinsed and chopped, and the equivalent of one large leek from\u00a0Lucky Dog Organic Farm, washed and\u00a0sliced into 1\/2-inch sections, the entire sauce mix cooked slowly for about 20 minutes while covered closely below\u00a0a circle of parchment paper, after which\u00a0a couple of tablespoons of chopped parsley from Phillips Farm were added<\/li>\n<li>collard greens from Tamarack Hollow\u00a0Farm,\u00a0cut as a rough chiffonade, then braised in a heavy pot in which one halved rocambole garlic head from Keith\u2019s Farm had been allowed to sweat in\u00a0some olive oil, the dish finished with salt, pepper, a drizzle of olive oil, and grated zest from an organic lemon<\/li>\n<li>the wine was a California (Napa) white,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/matt-iaconis-chardonnay-napa-valley-2014.htm\">Matthew Iaconis Napa Valley Chardonnay 2014<\/a>\u00a0(a Burgundy style, it\u2019s <a href=\"https:\/\/www.youtube.com\/watch?v=EwGF89gKY5U\">Matt\u2019s<\/a>\u00a0wine,\u00a0and comes to us via\u00a0<a href=\"https:\/\/us.nakedwines.com\/\">Naked Wines<\/a><\/li>\n<li><span style=\"line-height: 1.55;\">the music was <a href=\"https:\/\/en.wikipedia.org\/wiki\/Hans_Rott\">Hans Rott<\/a>, his Symphony\u00a0in E major, composed when he was 20, four years before his tragic death; we listened to <a href=\"http:\/\/www.amazon.com\/Rott-Symphony-E-major-Hans\/dp\/B0000016IH\">a performance\u00a0<\/a><\/span><a href=\"http:\/\/www.amazon.com\/Rott-Symphony-E-major-Hans\/dp\/B0000016IH\">by\u00a0Leif Segerstam\u00a0and the\u00a0Norrkoping Symphony Orchestra<\/a>; \u00a0may I go on? \u00a0<a href=\"http:\/\/www.artsjournal.com\/postclassic\/2009\/05\/so_near_to_my_inmost_self.html\">Kyle Gann has written<\/a>, about the relationship between Gustav Mahler and Hans Rott, &#8220;This is the great classical music movie waiting to be made.&#8221;<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I try\u00a0not to use the same recipe over and over again, even if my cooking style is to stay pretty minimal.\u00a0But when\u00a0we&#8217;re both hungry, I&#8217;m not really able to investigate a new approach, I end up repeating myself more often than I would want to.
