{"id":6304,"date":"2015-12-08T00:47:58","date_gmt":"2015-12-08T00:47:58","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=6304"},"modified":"2015-12-08T00:47:58","modified_gmt":"2015-12-08T00:47:58","slug":"goat-chops-with-herbs-carrrots-roasted-with-cumin-arugula","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=6304","title":{"rendered":"herbed goat chops; cumin-roasted carrots; arugula, shallot"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/12\/goat_chops_carrots_arugula.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-6305\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/12\/goat_chops_carrots_arugula.jpg\" alt=\"goat_chops_carrots_arugula\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>Taking a break from what has almost become a regular diet of fish, and mindful of how much we appreciate goat cheese (which we know doesn&#8217;t come from the boys), we decided to enjoy some\u00a0<em><a href=\"https:\/\/en.wikipedia.org\/wiki\/Goat_meat\">chevon<\/a><\/em>\u00a0last night. \u00a0The chops, appropriately enough, were\u00a0from one our\u00a0favorite goat and cow milk cheese makers, who also occasionally offers both kid and veal at its\u00a0Union Square\u00a0stand, for the obvious reason to which I just alluded.<\/p>\n<p>These chops were as delicious\u00a0as their cheese.<\/p>\n<ul>\n<li>kid goat chops from\u00a0<a href=\"http:\/\/www.considerbardwellfarm.com\/\">Consider Bardwell Farm<\/a>\u00a0in the Greenmarket, first marinated for about twenty minutes to half an hour in oil, Rocambole garlic from Keith&#8217;s Farm, bruised black\u00a0pepper, 4\u00a0juniper berries, also bruised,\u00a0chopped rosemary from from Hoeffner Farms, and organic lemon zest, then pan-grilled and finished with oil and lemon<\/li>\n<li>four different kinds and colors of small carrots from Alewife Farm, simply scrubbed, then rolled in olive oil, salt, and ground pepper on a small ceramic oven pan, roasted at 400\u00ba for about half an hour, or until tender<\/li>\n<li>one small shallot John D.
