It&#8217;s one of our favorite entr\u00e9es, and I&#8217;ve prepared it often, but basically only in two\u00a0ways. This time I didn&#8217;t summon\u00a0a single tomato, and there wasn&#8217;t a lemon in sight. \u00a0It was at least as delicious as ever. \u00a0<a href=\"http:\/\/www.epicurious.com\/recipes\/food\/views\/roasted-mackerel-with-garlic-and-paprika-51161600\">The recipe<\/a> originated with Gordon Ramsey.<\/p>\n<ul>\n<li>among the ingredients I used for the fish and potato serving, mostly following Ramsey&#8217;s directions,\u00a0were 5\u00a0small Boston mackerel from Pura Vida Fisheries in the Union Square Greenmarket,\u00a0one Rocambole garlic\u00a0from Keith\u2019s Farm, 12 ounces of &#8216;red thumb\u2019 potatoes from Berried Treasures,\u00a0\u00a0a teaspoon of <em>Piment\u00f3n de la Vera dulce<\/em>, one small leek (instead of the scallion specified in the recipe) from\u00a0Lucky Dog Organic Farm<\/li>\n<li>a large handful of \u00a0some very healthy arugula from Lani&#8217;s Farm, warmed in olive oil, seasoned with salt, pepper, a small drizzle of olive oil and\u00a0a smaller one\u00a0of white balsamic vinegar, some chopped thyme from Hawthorne Valley Farm and chopped parsley from Paffenroth Farms scattered on top<\/li>\n<li>the wine was a French (Burgundy) white,\u00a0<a href=\"http:\/\/La Maison Aegerter\">La Maison Aegerter<\/a> AA Chardonnay 2013<\/li>\n<li>the music was the album by the pianist Pedja Muzijevic, &#8216;<a href=\"http:\/\/www.pedjamuzijevic.com\/web\/music_details.aspx?ItemId=985554\">Sonatas and Other Interludes<\/a>&#8216;, in which John Cage&#8217;s &#8216;<a href=\"https:\/\/en.wikipedia.org\/wiki\/Sonatas_and_Interludes\">Sonatas and Interludes<\/a>&#8216;, for prepared piano, is laced with short pieces by\u00a0Domenico Scarlatti,\u00a0Franz Liszt, Wilhelm Friedemann Bach,\u00a0Robert Schumann,\u00a0Richard Strauss,\u00a0and\u00a0Aleksander Michalowski<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>a new approach to preparing a\u00a0favorite fish &nbsp; The fish was mackerel,\u00a0Boston, or Atlantic mackerel, which happens to be a wonderful, extremely healthy, delicious, and, apparently, remarkably-sustainable species. \u00a0Most people either love it dearly or ignore it like the plague.
