{"id":6235,"date":"2015-11-30T07:28:02","date_gmt":"2015-11-30T07:28:02","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=6235"},"modified":"2015-11-30T07:28:02","modified_gmt":"2015-11-30T07:28:02","slug":"smoked-trout-potato-pancake-applesauce-red-cabbage","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=6235","title":{"rendered":"ger\u00e4ucherte forelle; kartoffelpuffer und apfelmus; rotkohl"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/11\/smoked_trout_cabbage_latkes.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-6242\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/11\/smoked_trout_cabbage_latkes.jpg\" alt=\"smoked_trout_cabbage_latkes\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>This is the German-<em>isch<\/em> meal I had anticipated\u00a0in <a href=\"http:\/\/food.hoggardwagner.org\/2015\/11\/29\/parslied-cod-savory-potatoes-garlicanchovy-cauliflower\/\">the immediately previous post<\/a>. \u00a0It was\u00a0to be an\u00a0excuse to enjoy\u00a0a pretty decent riesling, and an all-too-infrequent visit to the food of the Wagner\u00a0ancestral\u00a0<em>Heimat<\/em>.<\/p>\n<p>The wine was in fact more than pretty decent, the food\u00a0as well, and <em>das Kocherei<\/em>\u00a0meant more than a little <em>Sehnsucht nach dem Rheinland<\/em>.<\/p>\n<ul>\n<li>one\u00a0twelve-ounce smoked rainbow trout from Dave Harris&#8217;s Max Creek Hatchery in the Union Square Greenmarket, portioned for\u00a0two servings,\u00a0accompanied by a cream sauce, a mix of\u00a0<em>cr\u00e9me fra\u00eeche<\/em>, a little plain yoghurt, both from Ronnybrook Farm Dairy in the Greenmarket, a little softened rich unsalted\u00a0Kerrygold Irish butter from Westside Market, finely sliced scallions from John D. Madura Farm, organic lemon juice, ground white pepper, a bit of sea salt, and chopped tarragon from Stokes Farm<\/li>\n<li>four potato pancakes (<em>kartoffelpuffer<\/em>), part\u00a0of a\u00a0new frozen food venture being introduced by\u00a0Franca Tantillo and Brian Zuckerberg at Berried Treasures, also in the Greenmarket, defrosted, heated on top of the stove in olive oil and a little butter, and served with a simple applesauce I had cooked for\u00a0half an hour late\u00a0that\u00a0afternoon using 4\u00a0aging and slightly bruised small apples from Berried Treasures, some Red Jacket apple cider and a smaller amount of <a href=\"http:\/\/evescidery.com\/\">Eve&#8217;s Cidery<\/a>&#8216;s &#8216;<a href=\"http:\/\/www.villagevoice.com\/restaurants\/eves-ciderys-bittersweet-cider-6523418\">Bittersweet<\/a>&#8216; (&#8220;naturally sparkling cider; fermented in the bottle&#8221;), both from the Greenmarket, a little\u00a0turbinado sugar and a pinch of\u00a0cinnamon freshly grated from a stick I keep in the spice cabinet for these special occasions<\/li>\n<li>a red cabbage salad, arranged on a plate to the side, a\u00a0somewhat loose\u00a0interpretation of\u00a0<a href=\"http:\/\/www.urbanharvest.ca\/recipes\/show\/3116\/\">a Kurt Guttenbrunner recipe<\/a>\u00a0which I had cut out of &#8216;New York&#8217; Magazine 10\u00a0years back, using\u00a0part\u00a0of a small cabbage from Paffenroth Gardens Farm and one aging\u00a0Rhode Island Greening apple from Berried Treasures which I had been keeping in the refrigerator since early in the fall<\/li>\n<li>the bread was a small Eric Kayser multigrain and multiseed loaf, &#8216;<em>Pain aux Cereales<\/em>&#8216;; the accompanying butter (this is Germany, after all) was\u00a0unsalted\u00a0Kerrygold Irish butter, from Westside Market<\/li>\n<li>the wine was a German (Nahe) riesling, from\u00a0<a href=\"http:\/\/schiller-wine.blogspot.com\/2015\/05\/lunch-and-wine-tasting-with-georg-rumpf.html\">Kruger-Rumpf<\/a>\u00a0, <a href=\"http:\/\/www.kruger-rumpf.de\/en\/wines-and-grapevarities\">M\u00fcnsterer Dautenpfl\u00e4nzer Riesling Sp\u00e4tlese<\/a> 2014,\u00a0purchased <a href=\"http:\/\/flatiron-wines.com\/kruger-rumpf-riesling-spatlese-munsterer-dautenpflanzer-2014.html\">from\u00a0Flatiron Wines &amp; Spirits<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=5457\">Anton Bruckner, Symphony No.5, performed by Giuseppe Sinopoli and the Staatskapelle Dresden<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This is the German-isch meal I had anticipated\u00a0in the immediately previous post. \u00a0It was\u00a0to be an\u00a0excuse to enjoy\u00a0a pretty decent riesling, and an all-too-infrequent visit to the food of the Wagner\u00a0ancestral\u00a0Heimat.
