{"id":621,"date":"2010-03-27T21:22:53","date_gmt":"2010-03-28T01:22:53","guid":{"rendered":"http:\/\/food.hoggardwagner.com\/?p=621"},"modified":"2010-03-27T21:22:53","modified_gmt":"2010-03-28T01:22:53","slug":"dinner-march-27-2010","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=621","title":{"rendered":"dinner, March 27, 2010"},"content":{"rendered":"<p><a rel=\"attachment wp-att-630\" href=\"http:\/\/food.hoggardwagner.com\/2010\/03\/27\/dinner-march-27-2010\/cavalo_nero_young_norwich_farms\/\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-630\" title=\"cavalo_nero_young_Norwich_Farms\" src=\"http:\/\/food2.hoggardwagner.org\/wp-content\/uploads\/2010\/03\/cavalo_nero_young_Norwich_Farms.jpg\" alt=\"cavalo_nero_young_Norwich_Farms\" width=\"600\" height=\"399\" \/><\/a><\/p>\n<p>This meal wouldn&#8217;t have begun as it did if I hadn&#8217;t spotted those <a href=\"http:\/\/en.wikipedia.org\/wiki\/Fava_beans\">fava beans<\/a>.<\/p>\n<p>While shopping at <a href=\"http:\/\/www.buonitalia.com\/\">Buon Italia<\/a> this afternoon I happened to see two or three still-unopened bright green pods on plates lying on the wooden dining table near the back of the store.\u00a0 This was the corner where the owner&#8217;s own family and workers take their mid-day meal.\u00a0\u00a0 Along with half a loaf of one of those familiar <a href=\"http:\/\/www.countryliving.com\/cm\/countryliving\/images\/EG\/easter-bread-6-de.jpg\">Italian Easter bread<\/a>s with the embedded eggs, the fava were among the remains of what appeared to have been a beautiful seasonal lunch just ended. \u00a0 I assumed the beans had come from the large greengrocer across the hall, and immediately headed over there to find out.<\/p>\n<p>Every year at the greenmarket I discover I&#8217;ve somehow missed out on the earliest tender beans (which require no cooking) and I have to resign myself to the long preparation process needed to enjoy the pleasures of this ancient legume.\u00a0 This spring it may look like I&#8217;ve finally gotten ahead of the game, but I think the folks who bring our <em>local<\/em> bounty to Union Square will still be keeping the youngest, tenderest stock all for themselves.<\/p>\n<ul>\n<li>raw fava beans from <a href=\"http:\/\/nymag.com\/listings\/stores\/manhattan_fruit_exchange\/\">Manhattan Fruit Exchange<\/a> in the <a href=\"http:\/\/www.chelseamarket.com\/\">Chelsea Market<\/a>, for shelling at the table, eaten with salt and pieces of <a href=\"http:\/\/en.wikipedia.org\/wiki\/Pecorino_Romano_cheese\">Pecorino Romano<\/a> cheese and accompanied with a select olive oil and slices of ciabatta from <a href=\"http:\/\/www.sullivanstreetbakery.com\/goods\/pane.html\">Sullivan Street Bakery<\/a>, both the cheese and the bread purchased at <a href=\"http:\/\/www.edengourmet.com\/\">Garden of Eden<\/a><\/li>\n<li>wine:\u00a0 2007 <strong><\/strong>Corvo (Sicily) Insolia in from <a href=\"http:\/\/www.yelp.com\/biz\/philippe-wine-and-liquor-new-york\">Philippe  Wine<\/a> in Chelsea<\/li>\n<li>rolled pork belly from <a href=\"http:\/\/chelseamarket.com\/dicksonsfarmstand\/\">Dickson&#8217;s Farmstand<\/a> in the Chelsea Market, roasted with garlic and rosemary;\u00a0 accompanied with sauteed slices of Yukon Gold potatoes from Garden of Eden, finished with balsamic vinegar; and wilted leaves of young cavalo nero from <a href=\"http:\/\/www.norwichmeadowsfarm.com\/\">Norwich Meadows Farms<\/a> in Norwich, New York, purchased at the <a href=\"http:\/\/nymag.com\/listings\/stores\/union-square-greenmarket\/\">Union Square Greenmarket<\/a><\/li>\n<li>wine:\u00a0 Navarra red, <a href=\"http:\/\/www.winemessenger.com\/wine\/Javier-Asensio-Navarra-Reserva-2000\">Javier Asensio Reserva 2000<\/a> from Wine Messenger<\/li>\n<li>Turkish dried figs from Garden of Eden<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This meal wouldn&#8217;t have begun as it did if I hadn&#8217;t spotted those fava beans.
