It was very similar to the\u00a0<a href=\"http:\/\/food.hoggardwagner.org\/?s=mackerel\">treatment I had often given to mackerel<\/a>, originally a Sicilian-inspired\u00a0<a href=\"http:\/\/www.foodandwine.com\/recipes\/grilled-mackerel-with-sicilian-caper-tomato-salsa\">recipe from Michael White<\/a>.<\/p>\n<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/11\/herring_seasoned.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-6137\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/11\/herring_seasoned.jpg\" alt=\"herring_seasoned\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>seasoned, ready for the grill pan<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/11\/herring_salsa_potatoes.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-6139\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/11\/herring_salsa_potatoes.jpg\" alt=\"herring_salsa_potatoes\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>plated<\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>eight one-and-a-half-ounce herring fillets from Pura Vida Fisheries,\u00a0washed, dried, dusted with\u00a0the zest of one and a half lemons, one and a half dried peperoncini, crushed, salt, and freshly &#8216;ground&#8217; (I always use an ancient\u00a0wooden mortar) pepper, placed skin side down on a ridged grill pan, cooked for 1 or 2 minutes, turned and cooked for 1 or 2 minutes more, drizzled with olive oil, served with lemon &#8216;eighths&#8217;,\u00a0and a tomato-caper salsa<\/li>\n<li>a salsa of halved red grape tomatoes from the\u00a0gentler southern jersey climes of Kernan Farms, tossed with olive oil, salted capers which had been rinsed and drained, some finely-sliced fresh garlic\u00a0from Norwich Meadows Farm, lemon juice, salt, and pepper,<\/li>\n<li>four\u00a0German Butterball potatoes from Berried Treasures, scrubbed and boiled in salted water until just tender, then drained and dried, cut into approximately one-inch sections, cooked in 3 tablespoons of oil over high heat until beginning to brown lightly (about 5 minutes), the flame turned down, one sliced medium clove of garlic from Norwich Meadows Farm added and cooked with the potatoes for about 3 more minutes, or until both potatoes really are brown and garlic crisp, seasoned with salt and pepper, served alongside the fish and salsa<\/li>\n<li><span style=\"line-height: 1.55;\">the wine was a Portuguese (D\u00e3o)\u00a0white<\/span><span style=\"line-height: 1.55;\">, <a href=\"http:\/\/casademouraz.blogspot.com\/\">Casa de Mouraz<\/a>, D\u00e3o Blanco &#8216;Encruzado&#8217; 2013,\u00a0from <a href=\"http:\/\/flatiron-wines.com\/casa-de-mouraz-dao-blanco-encruzado-2013.html\">Flatiron Wines &amp; Spirits<\/a><\/span><\/li>\n<li>the music was <a href=\"http:\/\/www.gramophone.co.uk\/review\/martines-il-primo-amore\">an album of works<\/a> by the almost-forgotten eighteenth-century composer\u00a0Marianna Martines\u00a0(hers is <a href=\"https:\/\/en.wikipedia.org\/wiki\/Marianna_Martines\">an amazing story<\/a>)<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>thinking the award for most photogenic fish fillet goes\u00a0to\u00a0the oily fish family &nbsp;
