it was just as good this time around, and just about impossible\u00a0to be satisfied with just one serving. \u00a0We didn&#8217;t have a cheese course.<\/p>\n<ul>\n<li>\n<p class=\"p1\"><span class=\"s1\">two large cloves of garlic from Norwich Meadows\u00a0Farm, sliced thinly, heated in a deep pan over medium-high flame, along with one\u00a0finely-chopped\u00a0not-so-hot Cayenne thin red pepper (with the seeds this time) from Oak Grove Plantation, until the garlic was\u00a0almost starting to color, pieces of boned smoked eel from Blue Moon Fish Company added and tossed until warmed through, half of some savory pangrattato* prepared a little earlier mixed in and combined,\u00a0the cooked and drained pasta (18 ounces of Setaro spaghetti chitarra from Buon Italia), added to the pan, tossed with the eel and pangratto and stirred over low heat for a couple of minutes, adding about\u00a0a cup of the reserved pasta water\u00a0while doing so, served in low bowls, where it was sprinkled with more pangratto and finished with &#8216;scissored&#8217; chives (Goodness Garden, New Hampton, NY) from\u00a0Union Market<\/span><\/p>\n<\/li>\n<\/ul>\n<p style=\"padding-left: 30px;\">*The preparation of the pangratto involved adding about\u00a0a third of a cup of homemade breadcrumbs to about a\u00a0fourth\u00a0of a cup of\u00a0olive oil in which two more thinly-sliced Norwich Meadows Farm\u00a0garlic cloves and 3 anchovies from Buon Italia had been heated for a short while, stirring for 4-5 minutes, the mixture then drained\u00a0on paper toweling and brought to room temperature<\/p>\n<ul class=\"ul1\">\n<li class=\"li1\"><span class=\"s1\">the wine was an Italian (Sicily) white,\u00a0<a href=\"http:\/\/www.manoavino.com\/2012\/11\/insolia-the-great-white-wine-grape-of-sicily.html\"><span class=\"s2\"><b>Corvo Insolia 2013<\/b><\/span><\/a>\u00a0from\u00a0<a href=\"http:\/\/www.yelp.com\/biz\/philippe-wine-and-liquor-new-york\"><span class=\"s2\"><b>Philippe Wine<\/b><\/span><\/a>\u00a0in Chelsea, which is located\u00a0about 50 yards from our front door<\/span><\/li>\n<li class=\"li1\"><span class=\"s1\">the music was that of\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=595776\"><span class=\"s2\"><b>Germaine\u00a0Tailleferre, Chamber Music &amp; Piano Music<\/b><\/span><\/a>,\u00a0the only\u00a0female member of the group of French\u00a0composers known as &#8216;<i>Les Six<\/i>&#8216;; the music is\u00a0terrific, and <a href=\"http:\/\/www.arkivmusic.com\/classical\/Name\/Germaine-Tailleferre\/Composer\/11861-1\"><span class=\"s2\"><b>her\u00a0story<\/b><\/span><\/a> is very much of the twentieth century<\/span><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>It was the second time I had cooked\u00a0this delicious simple dish, an adaptation of the one found on this site. \u00a0The extraordinary complexity of flavors, considering the minimal list of ingredients, was\u00a0still a surprise;
