Seafood, dredged in coarse polenta from Citarella which had been\u00a0seasoned with salt and freshly-ground pepper, fried very briefly (3-4 minutes on the first\u00a0side, a bit less on the other) in a bit of olive oil until golden brown, removed from the pan and (ideally) placed on warm plates, the heat below the pan turned down, knobs of butter, some chopped shallots and finely-minced garlic from Norwich Meadows Farm\u00a0added, the allium stirred and cooked (\u2018sweated\u2019) briefly, the flame\u00a0then turned off entirely, and lemon juice, chopped <a href=\"http:\/\/www.motherearthliving.com\/mother-earth-living\/fennel.aspx\">bronze fennel<\/a>\u00a0from Norwich Meadows Farm and\u00a0a bit of chopped parsley from\u00a0Tamarack Hollow Farm added to the pan along with a little more butter, all of it stirred once again until the butter melted, the sauce then scattered\/poured over the fish<\/li>\n<li>golden or orange cherry tomatoes from Berried Treasures, halved, then dressed with a good olive oil, salt, freshly-ground black pepper, drops of white balsamic vinegar, and chopped tarragon from Stokes Farm<\/li>\n<li>the wine was a California (Napa) white,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/matt-iaconis-chardonnay-napa-valley-2014.htm\">Matthew Iaconis Napa Valley Chardonnay 2014<\/a>\u00a0(a Burgundy style, it\u2019s <a href=\"https:\/\/www.youtube.com\/watch?v=EwGF89gKY5U\">Matt\u2019s<\/a>\u00a0wine,\u00a0and comes to us via\u00a0<a href=\"https:\/\/us.nakedwines.com\/\">Naked Wines<\/a>)<\/li>\n<li>the music was an entire album of <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=215109\">flute concertoes and symphonies\u00a0by Friedrich II<\/a> Hohenzollern<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>The preparation of the skate is familiar to both of us, but it was\u00a0one of the best ever, the fish cooked just right, the polenta coating perfectly crispy, and the bronze fennel innovation gave a favorite\u00a0a subtle twist.
