roasted radicchio; romanesco"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/10\/crab_cakes_salsa_radicchio_Romanesca.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5857\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/10\/crab_cakes_salsa_radicchio_Romanesca.jpg\" alt=\"crab_cakes_salsa_radicchio_Romanesca\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>The dinner was something of a improvisation for that evening, using ingredients I had just found\u00a0hanging around the kitchen (except perhaps for one\u00a0very deliberate move, ahead of time, to defrost some\u00a0frozen\u00a0crab cakes). \u00a0That may explain why, in the end, there was a lot going on with this entr\u00e9e, but it was pretty tasty nevertheless.<\/p>\n<ul>\n<li>two crab cakes from PE &amp; DD Seafood (ingredients: crab, egg, flour, red &amp; green peppers, garlic, salt, pepper, breadcrumbs, mayonnaise, milk, celery, parsley), heated in a heavy iron pan, 3\u00a0to 4\u00a0minutes to each side, sprinkled with fresh fennel seed from Lani&#8217;s Farm, and drizzled with a little olive oil, served on a bed of three different colors of\u00a0heirloom tomatoes from Berried Treasures,\u00a0chopped, which were combined with salt, ground black pepper, part of one tiny, finely-chopped fresh hot red\u00a0pepper from <a href=\"http:\/\/rootstoriverfarm.com\/\">Roots to River Farm<\/a>, and chopped fresh oregano\u00a0leaves from\u00a0from Rise &amp; Root Farm<\/li>\n<li>one medium radicchio from Lucky Dog Organic Farm, quartered lengthwise, placed in an unglazed ceramic oven pan, drizzled with olive oil and seasoned with salt and pepper, roasted at 400\u00ba for about 12 minutes, turning once, finished with a drizzle of balsamic vinegar, and scattered with shavings of Red Cow Parmesan cheese from Eataly<\/li>\n<li>portions of the core of the three small Romanesco broccoli we had enjoyed\u00a0<a href=\"http:\/\/food.hoggardwagner.org\/2015\/10\/29\/penne-romanesco-capers-anchovy-olives-chiles\/\">two nights ago<\/a>, along with sections of their upper cores, saut\u00e9ed &#8211; in steps &#8211; in olive oil (along\u00a0with\u00a0two small squashed cloves of garlic from Norwich Meadows Farm, which had earlier begun to turn brown), until the vegetable was\u00a0tender, seasoned with salt and pepper, a small amount of water added and then emulsified with the remaining oil<\/li>\n<li>the wine was a Slovenian (<a href=\"https:\/\/en.wikipedia.org\/wiki\/Vipava_Valley\">Vipava<\/a>) white,\u00a0<a href=\"http:\/\/www.vas-planina.si\/si\/guerila\">Guerila Vipavska Dolina Pinela 2012<\/a>, from <a href=\"http:\/\/www.shop.appellationnyc.com\/r\/products\/guerila-vipavska-dolina-pinela-2012\">Appellation Wines &amp; Spirits<\/a><\/li>\n<li>the music* was, in succession, an <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=804006\">August Klughardt piano\u00a0quintet<\/a>\u00a0from 1884,\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=489509#details\">several pieces by Pascal Dusapin<\/a>, including an extraordinary virtuoso trombone concerto, &#8216;Concerto for Trombone &#8220;Watt&#8221; &#8216;, and some <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=171552\">amazing piano pieces of Franz Liszt<\/a> (the very modern, &#8216;Nocturne for Piano, S 203 &#8220;Schlaflos, Frage und Antwort&#8221;&#8216;
